The Banquet Chef position at Meritage Resort & Spa presents an exciting opportunity for an experienced culinary leader to oversee a high-volume culinary operation. This leadership role involves managing a team of approximately 40 culinary professionals, including sous chefs, supervisors, cooks, and support staff. Reporting directly to the Executive Chef, the successful candidate will be responsible for all aspects of culinary operations related to banquet and catering events. This includes culinary execution, team leadership, production planning, financial oversight, food safety, and close collaboration with various departments such as Events, Banquets, Stewarding, Purchasing, and Food & Beverage.

This role seeks a hands-on leader who thrives in fast-paced environments and excels at large-scale production while ensuring exceptionally high standards of quality and consistency. The ideal candidate possesses strong organizational abilities, clear communication skills, and the capability to hold themselves and their team accountable for excellence in timing, presentation, safety, and professionalism. The Banquet Chef will lead from the kitchen floor, adeptly managing shifting priorities and complex event logistics to deliver flawless culinary experiences.

In addition to overseeing daily operations, the Banquet Chef will engage in menu development, refine banquet standards, and contribute to financial goals and strategic priorities. They will coordinate production plans, manage resources effectively, and uphold rigorous food safety and sanitation protocols. Leading team development through coaching, training, and performance management is central to this role, fostering a positive and motivating work culture.

This full-time position demands flexibility, including availability for early mornings, evenings, weekends, holidays, and extended hours as required by event schedules. The physical demands of the role include prolonged standing and walking, lifting, bending, and working around hot equipment and busy kitchens while maintaining safety and sanitation standards. Candidates with a culinary degree or formal culinary education, along with certifications such as California Food Handler Card and ServSafe Manager Certification, are preferred but not mandatory.

Job Requirements

  • Minimum of a high school diploma or equivalent
  • At least five years of culinary leadership experience in banquet or catering environments
  • Proven experience managing large culinary teams
  • Ability to work flexible hours including weekends and holidays
  • Strong understanding of food safety, sanitation, and HACCP
  • Ability to lift up to 50 pounds and perform physical kitchen tasks
  • Valid California Food Handler Card and ServSafe Manager Certification or willingness to obtain
  • Excellent communication and organizational skills
  • Experience with budgeting, scheduling, and inventory management
  • Ability to work in fast-paced, high-volume culinary settings

Job Qualifications

  • Minimum of five years of progressive culinary leadership experience in high-volume banquet operations
  • Previous experience leading a large culinary team
  • Experience executing multiple simultaneous events including weddings and conferences
  • Strong knowledge of banquet production, event timelines, and large-volume cooking
  • Proven ability to maintain quality, consistency, and presentation under pressure
  • Experience managing labor, scheduling, food costs, purchasing, inventory, and budgets
  • Strong organizational, communication, and leadership skills
  • Ability to prioritize multiple events and remain calm under pressure
  • Experience recruiting, coaching, and developing culinary teams
  • Advanced knowledge of food safety, sanitation, allergens, and HACCP
  • Proficiency with Microsoft Office and culinary management tools preferred
  • Culinary degree or formal education preferred
  • Required certifications or ability to obtain within a specified timeframe
  • Flexible schedule availability

Job Duties

  • Lead the daily culinary operation for all banquet events
  • Direct, coach, schedule, and develop a banquet culinary team of approximately 40 employees
  • Partner with the Executive Chef to execute culinary vision, banquet standards, and financial goals
  • Oversee large-scale production and simultaneous event execution ensuring quality and consistency
  • Review banquet event orders, menus, and timelines to ensure proper planning
  • Lead daily banquet event order meetings and culinary production briefings
  • Develop production plans, prep lists, station assignments, and execution timelines
