The Event Sous Chef position at Graton Resort & Casino plays a critical role within the culinary team, particularly in the execution of large-scale events, banquets, and special functions. Reporting directly to the Event Chef or Property Executive Chef, the Event Sous Chef is responsible for overseeing all kitchen operations related to events, ensuring that every dish prepared meets the resort's rigorous standards for food quality, presentation, safety, and sanitation. This role requires a culinary professional with excellent leadership skills who can effectively manage a team in fast-paced, high-pressure environments while cultivating a positive and productive work atmosphere.
The person in this role will collaborate extensively with event planners and front-of-house teams to translate menus into flawless dining experiences that delight guests. They will lead the preparation, cooking, and presentation phases during events while maintaining a well-organized kitchen environment. The job includes responsibilities such as reviewing banquet event orders, supervising culinary staff, managing ingredient inventory, and maintaining compliance with health and safety regulations. Additionally, the Event Sous Chef will be expected to participate in pre-event briefings and post-event reviews to ensure continuous improvement in operations.
This position demands strong organizational capabilities, sound judgment, attention to detail, and a hands-on approach to culinary preparation. The ideal candidate will have substantial experience in high-volume and fine dining environments and be well-versed in cost control and profit and loss management. A flexible schedule and the ability to manage time independently are essential to success in this role.
