The role of Culinarian at Kimpton Santo offers an exciting opportunity to join White Lodging’s esteemed portfolio, where an individual passionate about the food and beverage industry can evolve their culinary skills within a professional and supportive environment. This position emphasizes advanced scheduling flexibility through a user-friendly app, which allows team members to pick up or swap shifts easily, thus maintaining work-life balance while pursuing their culinary passions. As a Culinarian, you will receive training and hands-on experience to develop comprehensive cooking skills that encompass a variety of techniques such as sautéing, broiling, frying, roasting, butchery, garde manger, pantry management, and breakfast cookery. This role provides a solid foundation in food preparation and kitchen operations, with a strong emphasis on adherence to company procedures, food safety regulations, and health department guidelines.
At the core of this role is the responsibility to ensure exceptional quality in food handling, storage, and preparation – all while contributing to the financial efficiency of the kitchen by maintaining food and labor cost standards. Attention to detail is key when checking for the freshness of ingredients and consistently following established recipes and portion use records. Furthermore, employee engagement is encouraged through a focus on guest feedback scores, helping to positively influence the dining experience and overall satisfaction rankings. Job Requirements
- High school diploma or equivalent preferred
- Previous experience in food preparation or culinary environment preferred
- Ability to follow detailed instructions and recipes
- Strong attention to food safety and sanitation standards
- Good communication and teamwork skills
- Ability to work flexible schedules including nights, weekends, and holidays
- Physical ability to stand and move for extended periods
Job Qualifications
- Basic knowledge of cooking and preparation equipment
- Basic cooking skills including sautéing, broiling, frying, roasting, butchery, garde manger, pantry, and breakfast cookery
- Culinary education or apprenticeship preferred but not mandatory
- Ability to stand and move at a fast pace for long periods of time
Job Duties
- Train as a Culinarian, learning and practicing the full job description and duties of a cook
- Utilize company F&B procedures, health department regulations, and federal guidelines
- Follow proper food handling and storage procedures
- Assist in maintaining food cost and labor cost standards
- Check freshness of foods and ingredients
- Ensure all recipes and portion-use records are followed
- Be aware of guest feedback scores and work to positively influence rankings
- Foster a climate of cooperation and respect between coworkers
- Perform other duties as assigned
