The Employee Dining Room Cook role at PebbleBeach Company is vital in supporting the daily culinary operations. This position focuses on producing high-quality hot and cold menu items adhering to the company’s rigorous standards of food quality and presentation. The cook will prepare various dishes, including soups, sauces, and other menu items as directed by the chefs. This role requires flexibility to work various shifts, including nights, weekends, and holidays, showcasing the dynamic environment typical of PBC’s operations.

The role demands a thorough understanding of food preparation and sanitation protocols, proficiency in knife skills, and the ability to maintain an organized workstation. The Employee Dining Room Cook is expected to collaborate closely with chefs to discuss daily events and production schedules, contribute to improving food quality and presentation, and help maintain the cleanliness of the kitchen environment. Additionally, this position plays a role in inventory management by suggesting daily food order items and ensuring food rotation to reduce waste while maintaining freshness.

The ideal candidate will have a minimum of four years' experience in a similar Cook 2 or equivalent role at a premier restaurant, resort, or hotel property. A high school diploma or equivalent is required, and a graduate of an accredited culinary program or apprenticeship is considered desirable. Job Duties

  • Prepare all necessary menu items including soups and sauces as directed by the chefs
  • Discuss daily events and production schedule with the chefs
  • Make suggestions to improve the quality of food production and presentation
  • Assist in maintaining a clean and orderly work environment
  • Carefully follow the recipes provided
  • Add garnishes to completed plates of food
  • Time the cooking of food to ensure entrees from each order are completed simultaneously
  • Clean cooking surfaces and equipment
  • Check the quality of food produced at the station ensuring consistency of each mise en place
  • Arrange food on the plates ensuring attractive presentation
  • Contribute a list of needed items to the daily food order with chef approval
  • Rotate food in coolers dry storage and personal mise en place to ensure freshness and reduce waste
  • Set up the mise en place for the station
  • Set up buffet stations and perform carving stir fry or other designated function
  • Help other cooks as needed contributing to an environment of teamwork
  • Comply with all Pebble Beach Company safety and health policies and procedures
