The Prep Cook role at El Pollo Loco is a foundational position focused on supporting the kitchen’s daily operations by preparing ingredients and food items precisely according to proprietary recipes, preparation procedures, and strict food safety standards. This position reports directly to shift leaders, assistant managers, or general managers and supports kitchen staff during high-volume periods. Key responsibilities include marinating chicken, chopping produce, portioning proteins, and preparing salsas. The Prep Cook is also responsible for labeling, dating, storing, and rotating food items in compliance with FIFO (first in, first out) guidelines to minimize waste and ensure freshness.
In addition to food preparation, the Prep Cook helps maintain a clean and organized kitchen environment by sanitizing prep tools, utensils, and equipment regularly. By monitoring prep levels and communicating shortages or quality concerns to management, this role helps prevent disruptions in service and contributes to the overall efficiency and success of the kitchen team. Working in a fast-paced, dynamic environment typical of restaurant kitchens, the Prep Cook must adapt quickly, exhibit excellent teamwork skills, and consistently follow direction from supervisors.
The role also has physical demands, including standing, walking, bending, stooping, cutting, lifting, and handling kitchen tools and equipment safely and effectively. The Prep Cook will work in conditions that include exposure to heat from open-flame grills, cold storage, noise, and slippery surfaces. Flexibility in scheduling is essential since work shifts may include mornings, nights, weekends, and holidays.
