Job Description

Austin Community College (ACC) is a leading educational institution committed to providing quality education and practical training to its diverse student population. Recognizing the importance of hands-on experience, ACC has established its own teaching restaurant, Eatery 73, along with a Grab & Go service, dedicated to offering real-world culinary training for its students. This initiative allows students to gain invaluable experience in a professional kitchen environment while serving the community with high-quality food and service. The teaching restaurant functions as an extension of ACC's Culinary Department, maintaining high standards of food safety, sanitation, and culinary excellence.

The position available is for a line cook who will play a vital role in the operations of Eatery 73 and Grab & Go. The ideal candidate is kind, positive, and collaborates well with others, embodying the spirit of respect, dignity, and inclusivity. This role requires a commitment to quality and consistency in food preparation, with a focus on working in a clean and organized kitchen. The line cook will be responsible not only for cooking and plating dishes according to set recipes and standards but also for assisting with ingredient organization and maintaining kitchen cleanliness. This position offers the opportunity to work closely with the Executive Chef and the ACC Culinary Department to uphold the high standards of the establishment and provide excellent service during meal periods.

The line cook's duties include preparing plated food efficiently and in a timely manner while following food safety and sanitation guidelines. The cook must adhere strictly to recipe guidelines and procedures and follow par and prep levels as determined by the Executive Chef. Communication skills are essential for coordinating with chefs and coworkers to meet the needs of the business, equipment readiness, and ensuring product integrity. The employee must also be diligent in maintaining safety standards and sanitary conditions consistent with ACC Culinary Department protocols. Ordering, checking in, and properly rotating products using FIFO and labeling procedures are also key components of the job.

  • Consistently ensure that station mise en place is prepped, seasoned, and stocked throughout service and overall station remains clean and organized
  • Effectively participates in a professionally run service period, ensuring excellence in cooking, timing, plate assembly, and communication

Job Duties

  • Cook/prepare plated food in an efficient and timely manner while adhering to food safety and sanitation guidelines required by the Executive Chef and ACC Culinary Department
  • Follow recipe guidelines, procedures, and techniques required by the Executive Chef and ACC Culinary Department
  • Adhere to forecasting/par levels and prep levels as set by the Executive Chef
  • Communicate with the Executive Chef and coworkers in a professional and timely manner regarding the needs of the business, equipment, and product integrity
  • Adhere to and maintain safety and sanitation standards at all times in accordance with ACC Culinary Department’s policies and procedures
  • Check-in and store incoming orders/products following FIFO and labeling procedures to ensure proper rotation and usage
