Job Description
Din Tai Fung is a globally celebrated, family-owned restaurant brand founded in 1972, internationally renowned for its iconic Xiao Long Bao. With more than 165 locations across 13 countries, including 20 in North America, Din Tai Fung is Michelin-recognized and admired for its uncompromising quality, authentic flavors, and warm, gracious hospitality. The company offers an elevated yet inviting cultural dining experience designed to delight guests on any occasion. Known for its meticulous attention to detail and dedication to craftsmanship, Din Tai Fung has become a leader in the culinary world, especially in the realm of specialty dumplings and traditional Taiwanese cuisine. The brand prides itself on creating a welcoming environment for both guests and employees while maintaining the highest standards in food preparation and service.
The Dumpling Prep / Trainee role is a vital position within this esteemed restaurant, serving as the heart of the Din Tai Fung kitchen. In this role, the employee will prepare, assemble, fold, and steam the dumplings that guests know and love, directly contributing to the restaurant’s reputation for quality and excellence. This role involves preparing dumplings from start to finish, including measuring and cutting dough, rolling skins, stuffing, sealing, arranging, and steaming the dumplings while ensuring proper meat and allergen identifiers are included. The trainee will also play a key part in maintaining a clean and organized dumpling room, labeling items per established procedures and regulatory standards, and actively participating in monthly staff and dumpling meetings as part of ongoing development.
This is an ideal role for someone who is friendly, energetic, and highly motivated, eager to learn and thrive in a fast-paced, team-oriented environment. While prior dumpling experience is not required, experience working with dough, such as pastry or pizza dough, is considered a plus. Candidates should have open availability, physical stamina to stand for long periods, and a commitment to upholding the cleanliness and safety standards of the kitchen. The position begins with a comprehensive hands-on dumpling training program designed to equip new employees with the skills and knowledge needed to ensure success. Upon completion of training, the individual transitions into the Dumpling Prep role with an accompanying competitive pay increase.
The Din Tai Fung location for this role is at 15323 Proctor Avenue, City of Industry, CA 91745. The starting pay for this position is $21.50 per hour, with pay rates varying based on several factors including prior experience and current business needs. The work schedule is Tuesday through Saturday, from 6am to 2pm, although shift times may vary based on the position.
As a part of Din Tai Fung, employees have access to a range of benefits including competitive pay and employer contributions for medical insurance for individuals and eligible dependents, dental, vision, and life insurance, health savings accounts (HSA), commuter spending accounts, a 401(k) plan with company match, employee assistance programs, discounts through BenefitHub, employee meal discounts, and opportunities for career advancement as the brand prioritizes promoting from within. The company fosters an inclusive work environment and encourages applicants from diverse backgrounds to join their team. Employees are expected to uphold confidentiality concerning proprietary information and to adhere strictly to safety precautions and use of personal protective equipment in the kitchen. This role requires physical endurance and the ability to operate in various temperature environments while maintaining a high standard of food preparation and safety.
