Job Description

Din Tai Fung is a globally renowned, family-owned restaurant brand founded in 1972 and recognized internationally for its authentic Xiao Long Bao dumplings. With over 165 locations in 13 countries, including 20 in North America, Din Tai Fung is celebrated for its uncompromising quality, authentic flavors, and gracious hospitality. Each restaurant delivers an elevated and inviting dining experience that delights guests on any occasion, making the brand a leader in upscale Asian cuisine.

The Dumpling Prep / Trainee role at Din Tai Fung is a pivotal position within the kitchen team. As a Dumpling Prep / Trainee, you will be an essential part of the kitchen, responsible for preparing, assembling, folding, and steaming the dumplings that are the restaurant’s signature dish. Working in what is known as the "show kitchen," you will help showcase the star of the menu and play a key role in providing an engaging culinary experience for guests. This opening is based in Tigard, OR, at the Washington Square location, offering a pay rate of $21.00 per hour. Employment in this role involves hands-on training in a fast-paced, team-oriented environment, making it an excellent opportunity for those eager to develop culinary skills and grow within a globally recognized brand.

The training phase of this position equips individuals with thorough skills and knowledge to confidently prepare dumplings from start to finish. Training includes learning how to measure and cut dough, roll skins, stuff fillings, seal the dumplings properly, arrange them meticulously, and steam them to perfection. Additionally, the role involves ensuring accurate meat and allergen identification labeling to meet health and safety standards. Beyond food preparation, trainees contribute to maintaining a clean and organized dumpling room, adhering to all labeling procedures and regulations. Development is enhanced further by participating in monthly staff and dumpling meetings.

This role is specifically designed for candidates who are highly motivated and enjoy working in dynamic, team-based environments. Experience in dough preparation, though not mandatory, is advantageous. Candidates should have open availability, an eagerness to learn, and the ability to stand for extended periods throughout shifts. Din Tai Fung values inclusivity and promotes from within, offering employees opportunities for growth and advancement. The company also emphasizes confidentiality regarding all proprietary information, including recipes and standard operating procedures.

Choosing Din Tai Fung means joining a company that supports its employees with competitive pay and comprehensive benefits, including medical, dental, vision, and life insurance, health savings and commuter spending accounts, 401(k) with company match, employee assistance programs, and meal discounts. The company fosters a culture of support, development, and respect, making it an excellent workplace for culinary professionals at any stage of their careers.
