The Dumpling Prep/Trainee role at Din Tai Fung is an essential position within the kitchen, located in the show kitchen where food preparation is both an art and a performance. As part of the heart of the Din Tai Fung kitchen, this role involves preparing, assembling, folding, and steaming dumplings – a signature dish that defines the brand's culinary identity. This hands-on role requires precision and dedication, from measuring and cutting dough to rolling skins, stuffing, sealing, arranging, and steaming dumplings. The Dumpling Prep/Trainee works with a keen eye for detail to ensure each dumpling is crafted to perfection, including clearly labeling meat and allergen identifiers to meet strict food safety and quality standards.

This position is structured as a training role where new employees begin as Dumpling Trainees, undergoing a comprehensive, hands-on dumpling training program designed to equip them with the skills and knowledge essential for success in this specialized craft. Upon completion of the program, trainees graduate to become Dumpling Prep specialists who play a pivotal role in maintaining the premium quality for which Din Tai Fung is known. The role offers a competitive pay rate of $22.50 per hour and is based at the Costa Mesa, California location. Trainees also participate in monthly staff and dumpling meetings as part of their ongoing development.

Beyond dumpling preparation, this role contributes to maintaining cleanliness and organization in the dumpling room, adhering to rigorous procedural and regulatory standards for labeling and food safety. The position plays a crucial role in supporting kitchen operations, including keeping kitchen areas clean and sanitized, organizing inventory in walk-in coolers and freezers, assisting with deep cleaning, and adhering to confidentiality regarding proprietary information like recipes and standard operating procedures. The role requires stamina as it involves standing for long periods and sometimes lifting or moving items weighing up to 50 pounds.

Job Duties

  • prepare dumplings from start to finish including measuring and cutting dough, rolling skins, stuffing, sealing, arranging, and steaming dumplings
  • ensure proper meat and allergen identifiers are added
  • maintain a clean and organized dumpling room
  • label items according to procedures and regulations
  • participate in monthly staff and dumpling meetings
  • keep all kitchen areas clean and sanitized
  • organize items within walk-in coolers and freezers
  • lift and move boxes, bags, chairs, and tables up to 50 pounds
  • assist with regular deep cleaning of the kitchen
  • maintain confidentiality regarding all proprietary information including recipes and standard operating procedures
