As a Dumpling Prep / Trainee at Din Tai Fung, you will be an essential part of the kitchen team, working in the restaurant's show kitchen where you will prepare, assemble, fold, and steam the dumplings that are the hallmark of the brand. This role is central not only to the culinary excellence but also to the overall guest experience. The position begins with a hands-on training program designed to equip you with the skills and knowledge necessary for crafting the restaurant's signature dumplings with precision and care.
This role offers a competitive pay rate of $22.50 per hour and provides substantial opportunities for growth within the company. As a trainee, you will be learning the entire dumpling preparation process, including measuring and cutting dough, rolling skins, stuffing and sealing dumplings, and ensuring that all items are labeled correctly with meat and allergen identifiers. Job Requirements
- Applicant must be 18 years of age or older
- able to provide documentation to work legally in the United States
- open availability
- ability to stand for long periods of time
- no prior dumpling experience required
- must be friendly and highly motivated
- able to lift and move items up to 50 pounds

- experience in prep with dough (pastry, pizza, etc.) is a plus but not required

Job Duties
- Prepares, measures, and cuts dough
- rolls dumpling/bun skins
- stuffs, closes, and arranges dumplings/buns in a steamer
- adds meat and allergen identifiers
- steams dumplings/buns
- maintains a clean working space and dumpling room
- labels all items in accordance with regulations and procedures
- attends monthly staff and dumpling meetings
- keeps all kitchen areas clean and sanitized
- organizes items within the walk-in coolers and freezers
- lifts/moves boxes, bags, chairs, and tables (up to 50 pounds)
- assists with regular deep cleaning of the kitchen
- maintains confidentiality regarding all proprietary information including recipes and standard operating procedures
