The Carlyle is currently seeking a Captain to join its Fine Dining Restaurant team. This full-time permanent role plays a crucial part in ensuring an outstanding dining experience for guests by overseeing the service delivered within the restaurant. The Captain is responsible for taking food and beverage orders, serving alcoholic and non-alcoholic beverages, and delivering food orders to guests with courtesy and efficiency. Additionally, the Captain prepares select food items tableside, collects payments, and assists in the upkeep of the restaurant environment and equipment. The position demands an individual with comprehensive knowledge of restaurant operations, including service standards, menu details, liquor brands, wine characteristics, and state liquor laws. The candidate must demonstrate excellent guest service skills, be adept at suggestive selling techniques, and maintain a positive and professional attitude at all times. Physical stamina is essential as the role requires standing for extended periods, lifting, bending, and navigating the restaurant space with agility. Job Requirements
- Minimum 21 years of age to serve alcoholic beverages
- Five years’ experience in a similar ultra-luxury, fast paced restaurant service role
- Ability to speak, read and write English
- Physical ability to lift 40lbs and stand for extended periods
- Must be able to bend, lift, squat, reach and remain stationary as required
- Communicate effectively with guests and team members
Job Qualifications
- Minimum 21 years of age to serve alcoholic beverages
- Five years’ experience in a similar role within ultra-luxury, fast paced restaurant service
- Required to speak, read and write English, with fluency in other languages preferred
- Must be able to exert physical effort in transporting 40lbs, ability to stand for long periods of time

Job Duties
- Maintain complete knowledge of and comply with all departmental policies, service procedures and standards
- Ensure that standards are maintained at a superior level on daily basis
- Maintain complete knowledge of table/seat/station numbers, room capacity, hours of operation, proper table set-up and dress code
- Maintain complete knowledge of all liquor brands, beers and non-alcoholic selections, correct glassware and garnishes in the restaurant
- Maintain knowledge of the particular characteristics and description of every wine/champagne by the glass and major wines on the wine list
- Maintain complete knowledge of all menu items, prices, preparation method/time, major ingredients and quality standards of taste, appearance, texture, serving temperature, portion size, garnish and method of presentation
- Maintain complete knowledge of and strictly abide by state liquor regulations, particularly those prohibiting service to minors, intoxicated persons and drunk driving
- Maintain complete knowledge of P.O.S. and manual systems
- Take guests’ food and beverage orders, utilizing suggestive selling techniques
- Always maintain positive guest relations
- Be familiar with all hotel services/features and local attractions/activities to respond to guest inquiries accurately
- Adhere to payment, cash handling and credit policies/procedures
- Complete all closing reports as assigned and leave duty after reporting to supervisor
- Exhibit a friendly, helpful and courteous manner when dealing with guests and fellow employees
- Assist other staff with their job functions to ensure optimum service to guests
- All other duties as required
