Joseph A. The Food & Beverage Department at the Rochester Riverside Convention Center is crucial in delivering quality service during every event. An essential role within this department is the Utility position, dedicated to supporting kitchen and dishroom operations. The Utility team member is responsible for upholding sanitation and safety protocols while maintaining cleanliness throughout the kitchen and dishroom. This role is pivotal in assisting with the preparation and breakdown of food functions and coffee breaks, making sure all equipment, tableware, and utensils meet the highest standards of cleanliness.
This Utility position reports to multiple supervisors including the Lead Utility, Executive Kitchen Steward, Executive Chef, and Food and Beverage managers, highlighting its importance and the need for strong collaboration across teams. The ideal candidate will be familiar with sanitation procedures, use of dish machines, and possess the physical stamina necessary for the demanding nature of kitchen work. Responsibilities include managing the proper operation of dish machines and pot washers, organizing storage areas, maintaining chemical levels and temperatures, and ensuring the overall hygiene of the dishroom environment.
Beyond cleaning duties, the role entails helping set up food service equipment and tables, preparing hot and cold beverage service, and adhering to recycling and waste management protocols. This position requires an individual who is punctual, dependable, and able to work flexible schedules that may include day, evening, weekend, and holiday shifts. Employees must maintain professional appearance standards and follow strict uniform requirements. Moreover, the role demands physical endurance to perform tasks such as lifting heavy pots and pans, carrying equipment, and standing for extended periods.

Job Requirements
- minimum high school education or equivalent
- basic math skills
- six months dishwashing experience preferred
- ability to stand throughout entire shift
- ability to lift up to 100 pounds occasionally and 20 pounds frequently
- ability to work irregular hours including nights and weekends
- punctuality and adherence to uniform policy
- ability to follow sanitation and safety protocols
- communication and teamwork skills
- ability to bend, stoop, reach, and perform manual tasks
Job Qualifications
- minimum high school education or equivalent preferred
- able to read, write, and possess basic math skills
- at least six months experience in dishwashing preferred
- communication skills especially in interacting with co-workers
- teamwork skills
- ability to work irregular hours including day, evening, holidays, and weekends
Job Duties
- know weekly work schedule and be in full uniform
- use dish machine properly to clean all dishes used within the kitchen and events
- wash dirty pots and pans in pot sink and pot washer
- organize storage of dishes, glasses, silverware, pots, pans, utensils in appropriate areas
- maintain dish machine and pot washer water levels and monitor chemical usage and temperatures
- keep soiled dish area organized and clean between functions and at the end of the day
- keep room behind dish machine clean and organized
- wipe down and sanitize all metal surfaces in dishroom and pot room
- sweep and mop floors between functions and at the end of the day
- remove trash to dumpster following recycling procedures and reline trash cans
- maintain clean and organized mop closet
- assist with kitchen plate-up, food service set-up, and breakdown when needed
- follow proper breakdown procedures for dishroom and pot room daily
- maintain sanitation of utility areas and equipment
- prepare all hot and cold beverages as indicated and deliver to food service areas
- maintain sanitation of hand towel dispensers, soap dispensers, and hand wash sinks
- set up and remove food service equipment and tables for banquet services
- report all breakage to management
- perform additional duties as directed by management
