Job Description

As a key component of our team, the Dishwashing and Sanitizing Operative plays a crucial role in supporting kitchen operations by cleaning and sanitizing kitchen areas and operating the dishwashing equipment efficiently and safely. This position is essential for maintaining cleanliness and hygiene standards, which directly impact food safety and guest satisfaction.

This role involves the safe and effective operation of our dishwashing machine, ensuring that all dishware is properly cleaned, polished, and organized for use by the kitchen and wait staff. In addition to dishwashing duties, the role requires sweeping and mopping floors to keep them clean and dry, as well as cleaning walls, tables, racks, sinks, floor mats, and disposal areas. The operative will also be responsible for cleaning ovens, hoods, filters, drains, hot boxes, steam tables, flat boxes, and ceiling vents on a scheduled basis or as directed by the lead steward. Other responsibilities include emptying trash cans, washing them out, and managing special cleaning projects as assigned.

This position demands physical stamina due to the nature of the tasks involved, such as lifting and carrying dish racks and trash cans, sweeping, mopping, bending for various cleaning tasks, and standing for extended periods. Operating within a busy kitchen environment, the operative must maintain high standards of cleanliness to support smooth restaurant operations and comply with health and safety regulations. Candidates should be able to work scheduled days and shifts that may vary based on the restaurant’s needs.

The role also requires cooperation and communication with other restaurant personnel to ensure that guest needs are met and the kitchen environment remains efficient and hygienic. Protective clothing such as rubber gloves, back supports, and protective eyewear will be provided and must be worn to ensure safety while handling cleaning chemicals and operating equipment.
