The role involves operating and maintaining various cleaning equipment and tools critical to kitchen and dining area sanitation. Responsibilities include managing dishwashing machines, pot-scrubbing stations, hand wash stations, and trash compactors. The occupant of the position ensures that kitchen and storeroom areas, utensils, knives, and equipment are thoroughly washed and disinfected, adhering to the highest standards of cleanliness and safety.

This role is foundational to maintaining the health and safety codes required in food and beverage operations and is crucial in supporting the overall guest experience. Stock management tasks such as receiving deliveries, properly storing perishables, and rotating stock are key duties, as is ensuring that all clean wares are stored correctly. The position requires the consistent use of detergent and sanitizing chemicals in a three-compartment sink setting, as well as inspecting and sorting items to guarantee quality and cleanliness. Additional responsibilities include breaking down bus tubs, maintaining trash and dumpster areas, cleaning and mopping assigned departments, and responsibly disposing of glass and recyclables.
