The Dish Team at Cali plays a crucial role in maintaining the operational flow of the kitchen and supporting the culinary process. Members of this team are responsible for preparing high volumes of fresh vegetables and proteins, creating homemade sauces and marinades, and ensuring that the kitchen is well-stocked and efficient. These culinarians help uphold the restaurant's high standards by following recipes meticulously to maintain taste consistency and quality. The role goes beyond food preparation, requiring dish team members to actively engage in stringent food safety protocols, sanitation practices, and effective inventory management, including rotating produce using FIFO principles.

Candidates for the Dish Team role should be detail-oriented, self-accountable, and able to lift at least 20 pounds consistently while working in hot and cool environments. A willingness to learn and adapt in a dynamic environment is essential. While the position requires a minimum age of 18 and ServSafe certification (which may be obtained after employment), a genuine passion for culinary arts and wellness is equally important. Job Requirements

  • 18 years of age or older
  • Reliable transportation to and from work
  • Can work in both hot and cool environments
  • Able to lift at least 20 pounds and frequently squat and bend
  • Self accountable in upholding high standards
  • Able to work in a fast-paced setting for up to 8 hours daily or as needed
  • Willingness to learn and develop

Job Qualifications

  • Previous culinary experience with a strong passion for food, people, and the planet
  • Team player with a good attitude and works with a sense of urgency
  • Ability to read and follow written recipes
  • ServSafe certification required (may be obtained after employed)
  • Genuine passion for food

Job Duties

  • Must be an ambassador of our mission and core values
  • Setting the kitchen up for success by ensuring there are enough dishes, pots, and pans to sustain the shift
  • Preparing and prepping high volumes of vegetables and protein, making homemade sauces and marinades
  • Putting away and rotating produce and food orders using FIFO methods accordingly
  • Maintain pars and counts of responsible items, communicate any opportunities with Chef or Manager
  • Use kitchen machinery including knives, ovens, grills, gas stoves, food processors, blenders, dish machines and triple sink
  • Maintaining clean dishes and utensils, monitoring water temperatures and chemical usage
  • Cleaning and maintaining floors in the back of house and front of house including restroom maintenance
  • Properly complying with food safety and sanitation standards, keeping certificates up to date
  • Following recipes and adhering to food specs, ensuring quality and consistency
  • Properly open, close and clean your station to set yourself and other team members up for success
  • Perform additional responsibilities as requested at any time
