The role of Kitchen Steward within Driftwood Hospitality Management is a critical support position in the culinary operations, responsible for maintaining the cleanliness and organization of cooking utensils and service ware. This role is essential to ensuring that cooks, bus persons, and food servers have the necessary equipment to provide guests with an exceptional dining experience. The job involves the careful sorting, washing, and storage of soiled ware using commercial kitchen dish machines, alongside the cleaning of kettles, tilt skillets, pots, pans, and other cooking equipment to maintain operational efficiency in the kitchen.

Given the hotel's 24/7 operation, the position requires flexibility in working hours, including variations in shift days and start times. Physical strength and stamina are vital due to the demanding nature of the work, which includes pushing and pulling service carts weighing up to 100 pounds and performing constant movements like twisting, bending, and stooping. The Kitchen Steward also performs routine cleaning duties of the physical surroundings with standard hotel cleaning products to uphold health and safety standards, including the cleaning and drying of floors to prevent slip and fall accidents.

Safety is paramount in this role; hence, the Kitchen Steward must adhere to all company policies and procedures related to safety and security, use protective equipment correctly, and report any unsafe conditions or incidents promptly to management. The role also involves understanding fire prevention and emergency procedures specific to the department. Maintaining a neat, clean, and well-groomed appearance as outlined in the team member handbook is required for all team members.

This position is not only about cleaning and maintenance but also requires a thorough understanding of food safety, as reflected in the requirement to hold a current Food Handler Card. The ability to operate dish machines according to health department and hotel standards and the capacity to interpret product labeling instructions for safe application further underscore the importance of knowledge and compliance in this role.

Job Requirements

  • Sufficient manual dexterity of hand in order to use all kitchen equipment, i.e., knives, spoons, spatulas, tongs, slicers, etc
  • Ability to push/pull service carts weighing up to 100 lbs
  • Ability to grasp, lift and/or carry, or otherwise, move or push goods on a hand cart/truck weighing a maximum of 100 lbs
  • Constant twisting, bending, stooping, reaching, standing, walking, talking, hearing, seeing and smiling
  • Physical strength and stamina are essential due to the high activity level

Job Qualifications

  • Hold a current food handler card
  • Knowledge of service ware and how to maintain same in order to compliment guest experience
  • Ability to operate commercial kitchen dish machine in accordance with hotel and health department standards
  • Ability to comprehend and apply written product labeling instructions to enable the safe application of products and processes within the hotel

Job Duties

  • Promptly and carefully sort soiled ware so that it can be put through the dish or pot machine properly
  • Quickly wash all ware and replace in storage areas as designated
  • Keep dish machine properly cleaned and filled with water per hotel standards
  • Clean kettles, tilt skillets, pots and pans promptly and completely so cooks can carry out their work
  • Perform general/routine cleaning tasks using standard hotel cleaning products as assigned by supervisor to adhere to health standards
  • Clean and dry floors to avoid slip/fall accidents
  • Separate linen from other debris
  • Adheres to all company policies and procedures
  • Follows safety and security procedures and rules
  • Knows department fire prevention and emergency procedures
  • Utilizes protective equipment
  • Reports unsafe conditions to management
  • Reports accidents, injuries, near-misses, property damage or loss to management
  • Provides for a safe work environment by following all safety and security procedures and rules
  • All team members must maintain a neat, clean and well groomed appearance
  • Perform any related duties as requested by management
  • Assists other kitchen personnel when need
