The Fox Theatre's Marquee Club, presented by Lexus, is a luxurious three-story, 10,000-square-foot bar and lounge exclusively accessible to Club Level ticket holders and annual members, emphasizing premium hospitality and guest engagement. This role as Director of Food & Beverage is a pivotal leadership position responsible for overseeing all food and beverage operations, including high-volume theatre concessions, premium beverage services within the Marquee Club, culinary operations, and private event catering. Beyond food and beverage, the Director will lead efforts to expand and innovate merchandising and retail programs to enhance revenue and guest satisfaction. As Director of Food & Beverage, you will be expected to manage comprehensive food and beverage programs ensuring the highest quality, consistency, and innovation in guest service delivery. You'll coordinate staffing, purchasing, inventory control, and POS system management to streamline operations and maximize efficiency. A key aspect of the role involves developing and managing departmental budgets, forecasts, and performance metrics while instituting robust cash handling, payroll, and inventory control measures. Leadership competence is critical as you will hire, train, mentor, and inspire a diverse team across multiple departments like concessions, culinary services, private event catering, and merchandising. The responsibility extends to driving the growth of merchandising programs by developing venue-specific retail offerings and expanding retail opportunities beyond the theatre. Regulatory compliance and adherence to food safety, alcohol service, and labor laws are essential, along with maintaining impeccable sanitation, safety, and operational standards.
The ideal candidate will hold at least a bachelor’s degree in Hospitality, Business, or a related field with over seven years of progressive leadership experience in food and beverage or related hospitality sectors. Experience in large-scale, entertainment-driven, or high-volume environments is highly valued. This role demands a strong hospitality philosophy centered on guest experience, proficiency in POS systems and various business software, and the ability to thrive in a multifaceted, fast-moving setting. Preferred qualifications include experience in premium or VIP hospitality, merchandising management, and live venue operations. The position has physical demands including the ability to work extended shifts, navigate multiple floors of the venue, and maintain flexibility for evening, weekend, and holiday work schedules. Job Duties
- Champion world-class hospitality standards across all F&B and retail operations
- Oversee theatre concessions, Marquee Club beverage service, culinary operations, and private events
- Ensure seamless service delivery in both high-volume and premium environments
- Manage all aspects of F&B operations including staffing, purchasing, inventory, POS systems, and logistics
- Optimize speed of service, product quality, and operational efficiency
- Maintain strong systems for inventory, storage, and equipment management
- Maximize profitability across food, beverage, and merchandise programs
- Develop and manage departmental budgets, forecasts, and performance metrics
- Implement controls for cash handling, payroll, and inventory management
