Job Description

The Moxy Charleston Downtown is a vibrant and contemporary hotel located in the heart of Charleston, known for its stylish ambiance and dynamic hospitality offerings. This establishment prides itself on providing guests with memorable experiences through its innovative food and beverage services. Among its standout features is the Rooftop Bar Moxy, a lively venue that serves as a centerpiece for social gatherings, combining excellent drinks with a unique atmosphere. We are currently seeking a Director of Food & Beverage to lead and transform the food and beverage operations at our Rooftop Bar Moxy. This role is critical in maintaining and elevating our standards of quality, service, and financial performance. The successful candidate will oversee the full spectrum of food and beverage activities, managing both front and back of house to ensure consistency and excellence. This leadership position requires a balance of creativity and operational discipline, focusing on enhancing guest satisfaction while tightly controlling profitability, costs, and operational standards.

The Director of Food & Beverage will be responsible for creating and implementing market-leading offerings in a stylish and contemporary manner, ensuring that the menu options reflect both innovation and customer preferences. This includes menu design, pricing strategies, and special event planning. The role places a strong emphasis on cultivating a service culture that delights customers with creativity, anticipation, and authenticity. Additionally, the Director will manage marketing, sales, profitability, and quality service goals within the department.

Operational responsibilities extend to maintaining strict cash and charge procedures, analyzing guest checks, overseeing tip reports, and monitoring sales data closely. The role requires regular engagement with guests, including greeting and overseeing service to ensure satisfaction. Inventory control and cost management are also essential, with a focus on accuracy in purchasing, supply usage, and invoice handling.

Leadership and team development are key components of the position. The Director will hire, train, motivate, and lead the food and beverage team, ensuring effective onboarding and continuous professional growth for all team members. Safety and sanitation standards must be rigorously maintained, aligning with OSHA regulations and food safety laws. The Director is also tasked with enforcing all legal requirements related to employment, wage and hour laws, and the sale and consumption of alcoholic beverages.

Effective payroll management, fostering a cooperative work environment, resolving guest complaints, and ensuring compliance with hotel policies round out the comprehensive responsibilities. This role demands a hands-on leader with a strong presence, excellent communication skills, and the ability to inspire and manage a diverse team in a high-energy setting.

Job Requirements

  • Four-year college degree in hospitality management or culinary arts
  • Proven experience in food and beverage leadership roles such as director or general manager
  • Strong leadership and team development abilities
  • Excellent communication skills both written and oral
  • High level of professionalism and diplomacy in guest interactions
  • Ability to write reports and deliver presentations
  • Problem-solving skills and ability to handle various operational challenges
  • Knowledge of safety and sanitation regulations including OSHA standards
  • Experience in managing financial aspects such as budgeting, payroll, and inventory control

Job Qualifications

  • Strong track record of leadership and develop/mentorship skills
  • Four-year college degree in Hospitality Management or Culinary Arts
  • Excellent written and oral communication skills
  • Ability to deal with difficult internal and external guests with tact, professionalism and diplomacy
  • Ability to write routine reports and correspondence
  • Ability to speak in front of large groups or customers and/or teammates
  • Ability to solve problems and deal with a variety of situations

Job Duties

  • Create and implement market leading offerings throughout the department in a stylish and contemporary way
  • Create menu items, pricing, and menu designs for all outlets, special events, and banquet events
  • Create a service culture which focuses on delighting the customer and surprising them with creativity, anticipation and a high degree of authenticity
  • Take responsibility for marketing, sales, profitability and quality service goals for the Food and Beverage Department
  • Responsible for proper cash and charge procedures, guest check analysis, tip reports, ticket controls and daily sales reports and analysis
  • Greet guests and oversees actual service on a routine, random basis
  • Maintains control of food, beverage and supply costs and inventory by adhering to standards for purchasing and inventory control
