The Director of Food & Beverage at Mayo Civic Center plays a critical leadership role with comprehensive responsibility over all food and beverage operations. This includes management of concessions, premium hospitality services, catering operations, and special event sales. The Director ensures that guests receive superior service and memorable experiences by maintaining high operational standards, overseeing financial performance, and ensuring compliance with health and safety regulations. As the head of the food and beverage department, the Director is tasked with reviewing and approving budgets, analyzing sales and labor data, and making informed decisions to drive operational efficiency and cost control. They lead efforts in sales projections and manage the financial aspects of food and beverage events to meet performance goals. A key part of the role involves developing and implementing operational standards, supporting new business development, and promoting the food and beverage services to expand the venue’s client base.
The position also involves close collaboration with finance and support teams to ensure compliance with company policies and regulations, including adherence to liquor laws and health department requirements. Leadership extends to operational planning and conducting post-event reviews to continuously improve service quality and financial outcomes. Additionally, the Director is responsible for inspecting facilities to ensure safety, quality, and regulatory compliance.
Candidates for this role should possess a bachelor’s degree in Hospitality Management, Business Administration, Food & Beverage Management, or a related field preferred, along with a minimum of five years of leadership experience managing food and beverage operations in large venues such as arenas, convention centers, or similar hospitality environments. The ideal candidate will have expertise in budgeting, financial forecasting, labor management, vendor relations, and contract negotiations. Experience working within union environments is considered a valuable asset.

The ability to work flexible hours, including nights, weekends, and holidays, is essential due to the nature of event scheduling. Job Requirements
- Bachelor’s degree in hospitality management business administration food and beverage management or related field preferred
- Minimum 5 years of leadership experience in food and beverage operations within a large venue arena convention center or hospitality environment
- Experience with budgeting financial forecasting labor management and operational planning
- Experience with vendor management purchasing procedures and contract negotiations preferred
- Experience working in union environments is a plus
- SERV Safe food handler certification required within 30 days of hire
- Ability to work flexible hours including nights weekends and holidays
- Must be able to pass background check
- Ability to lift at least 50 lbs
- Ability to walk long distances for more than 50 percent of workday

- Must present a professional appearance and demeanor during workday

Job Qualifications

Job Duties
- Review approve and monitor budgets making recommendations regarding adjustments as needed
- Analyze food sales attendance and labor data to maintain cost control and operational efficiency
- Oversee food and beverage sales projections and budget performance for all assigned events and accounts
- Ensure high standards of guest service and client satisfaction during all events
- Develop and implement operational standards across all food and beverage operations
- Support new business development initiatives by identifying opportunities for new clients contracts permits and partnerships
- Direct growth of food and beverage accounts by promoting services to new and existing clients
- Collaborate with finance and support teams to ensure operational alignment and compliance with company policies
- Maintain cost and quality control standards and ensure all facilities and equipment meet state and local health regulations
- Lead operational planning for events and conduct post-event financial and operational reviews
- Direct and administer the execution of operating and marketing financial plans and documents including operating revenue and expense budgets capital expense plans and budgets
- Inspect food service facilities to ensure equipment and building meet state local health laws and internal regulations
- Enforce all liquor laws and adhere to all health dept regulations
- Other duties as assigned
