The Lansing Center Complex invites applications for the position of Director of Food and Beverage, a pivotal leadership role responsible for overseeing the entire Food and Beverage Department. This includes managing concessions, mobile carts, event catering, culinary services, catering sales, menu creation, financial oversight, and budgeting for both The Lansing Center and Groesbeck Golf Course. The Director of Food and Beverage is tasked with ensuring excellence in product quality, presentation standards, and operational controls while driving customer satisfaction and profitability. This role involves managing staff, establishing and maintaining strong client relationships, and ensuring compliance with health, safety, and alcohol service regulations. The role demands a strategic leader capable of marketing Food and Beverage services, forecasting sales, controlling inventory, and preparing detailed financial and per-capita reports.
Core responsibilities include purchasing and distributing products to concession locations, hiring and training staff, scheduling labor according to event demands, controlling spoilage and costs, and maintaining high standards for food quality and sanitation through inspections and taste tests. The position requires carrying out supervisory duties aligned with company policies and legal requirements, including hiring, disciplinary actions, training, performance appraisals, and conflict resolution. The Director of Food and Beverage must exhibit strong interpersonal skills to interact effectively with all levels of staff and management. The role is salaried and exempt, encompassing flexible working hours including nights, weekends, and holidays.
Candidates should bring significant management experience in food and beverage operations, ideally with both catering and concession expertise. A culinary degree or certificate is preferred along with knowledge of current culinary trends, recipe standardization, plating techniques, and menu costing. Certifications in ServSafe Food and Alcohol, PCI Compliance, and alcohol awareness training are essential. Proven abilities in budget management, negotiation with vendors, customer service, organizational skills, and proficiency in Microsoft Office are also critical to success. The compensation package includes a competitive salary range of $85,000 to $98,500 plus bonus potential and comprehensive benefits such as medical, dental, vision, life and disability insurance, paid vacation, and a 401k plan. Job Requirements
- Certificate or degree from accredited culinary school, college, or technical institution preferred
- Minimum of five years management-level Food and Beverage experience or equivalent
- Experience overseeing food and beverage operations including sales, inventory control, cost management, and food preparation
- Experience in food purchasing for catering and concession environments including price negotiation
- ServSafe Food and Alcohol certifications
- PCI Compliance credentials
