Job Requirements

  • Certificate or degree from an accredited culinary school, college, or technical institution preferred
  • minimum five years experience in a management-level food and beverage position or equivalent combination of education and experience
  • prior experience overseeing comprehensive food and beverage operations including sales, inventory control, cost management, and food preparation procedures
  • experience in food purchasing for catering and concession environments with price negotiation skills
  • strong knowledge of current culinary and concession trends, presentation standards, and food quality expectations
  • ServSafe Food and ServSafe Alcohol certifications
  • PCI Compliance credentials
  • alcohol-awareness training and ability to train others
  • strong customer-service orientation
  • results-driven individual capable of meeting budgetary goals
  • excellent organizational, multitasking, planning, written, and verbal communication skills
  • attention to detail
  • prior supervisory experience
  • proficiency in Microsoft Office

Job Duties

  • Oversee daily food and beverage operations including concessions, mobile carts, event catering, and culinary services
  • manage catering sales, menu creation, financial management, and budgeting
  • market food and beverage services to clients and establish operational controls
  • ensure high-quality product standards and presentation across all food and beverage operations
  • create sales projections and event budgets, manage inventory and prepare per-capita reports
  • oversee purchasing and distribution of products to concession outlets, ensure compliance with health department and alcohol service regulations
  • hire and train concession employees, schedule labor needs, control spoilage and cost of sales, inspect and taste prepared food to maintain quality and sanitation standards
  • direct and coordinate all food and beverage units, conduct supervisory responsibilities including hiring, training, performance appraisal, rewarding and disciplining employees, resolving complaints
  • interact effectively with all levels of staff including management while working flexible hours such as nights, weekends, and holidays
  • ensure adherence to company policies and applicable laws
