Legends Global is currently offering an exciting opportunity at the Save Mart Center for a Director of Food and Beverage. This key leadership position is responsible for the daily management and overall direction of the Food and Beverage Department, which encompasses concessions, mobile carts, general event catering, culinary operations, catering sales, menu development, financial oversight, and budgeting. The Director plays a pivotal role in driving the entire food and beverage operation either personally or by guiding subordinate supervisors. The role involves comprehensive responsibilities such as marketing food and beverage services to clients, establishing Food and Beverage control measures, and fostering positive client relationships. Maintaining high-quality standards for food products and presentation across all operational tiers is essential. The Director manages departmental staff and operations daily, creates sales projections and event budgets, and oversees inventory control while ensuring compliance with health and alcohol beverage regulations. The role also includes responsibilities for purchasing, product distribution, menu engineering, detailed costing, training new concession employees, and anticipating labor needs for event and non-event days. Leaders in this role exercise rigorous control over spoilage and cost of sales, conduct quality and sanitation inspections, and carry out supervisory functions in line with company policies and applicable laws. This includes hiring, training, appraising, rewarding, disciplining employees, and resolving workplace challenges. Flexible working hours are required, including nights, weekends, and holidays, reflecting the dynamic nature of live events. The position demands autonomy, strong interpersonal skills, and the ability to interact effectively with management and staff across all levels. Overall, the Director of Food and Beverage at Legends Global will be integral in elevating the guest experience through exceptional food service management, operational excellence, and strategic leadership.

Job Requirements

  • Certificate or degree from an accredited culinary school, college, or technical school preferred
  • minimum 5 years experience in management level position in Food & Beverage or equivalent combination of education and experience
  • previous experience in overall Food and Beverage operations, sales, inventory control, cost control and food preparation procedures
  • experience in food purchasing including price negotiations
  • excellent knowledge of current culinary and concession trends, presentation, and food quality
  • experience in standardizing recipes, plating, and costing of menus
  • experience collaborating with sub-contractor vendors
  • Serv Safe food and Serv Safe Alcohol certified
  • maintain PCI Compliance certification
  • alcohol awareness certificate and training capabilities
  • strong orientation to customer service
  • results oriented individual with ability to meet required budgetary goals
  • excellent organizational, multi-tasking, planning, written and verbal communication skills
  • attention to detail and service oriented
  • prior supervisory experience required
  • computer skills including proficiency with Microsoft Office programs
  • ability to be creative with buffet presentations and maintain quality product

Job Duties

  • Market food and beverage services to clients and establish food and beverage controls
  • foster and maintain positive client relations
  • ensure high quality levels for product and presentation across all tiers of food and beverage operations
  • manage daily Food and Beverage departmental operations and personnel
  • create food and beverage sales projections and budgets for facility events
  • manage stand inventory and per capita reports for each event and ongoing fiscal reporting
  • purchase and oversee distribution of all products to concessions outlets
  • ensure compliance with health department regulations, alcohol beverage service guidelines, menu engineering, and detailed costing
  • hire and train new concession employees and schedule labor needs
  • control spoilage and cost of sales
  • inspect and taste prepared food to maintain quality standards and sanitation regulations
  • direct and coordinate Food and Beverage units
  • perform supervisory responsibilities including interviewing, hiring, training, planning, assigning, appraising, rewarding, disciplining employees, and resolving complaints
  • work flexible hours including nights, weekends, and holidays
