The Director of Food & Beverage role at Idle Hour Country Club is an executive-level leadership position that holds primary responsibility for the comprehensive oversight of all dining, beverage, and event operations. This senior role demands a visionary leader who can architect and drive operational excellence by establishing robust systems that ensure consistency, efficiency, and superior member services across every restaurant outlet, event format, and season. The position emphasizes building a strong foundation of clarity, accountability, and operational discipline, moving away from reliance on individual heroics towards creating scalable, repeatable processes.

Serving as the senior food and beverage authority, the Director will lead collaborative partnerships across culinary, service, events, and club leadership to embed hospitality deeply into the Club’s DNA. This role is about creating a seamless guest experience that aligns with Idle Hour’s hallmark warmth and trust, supported by a resilient operational framework. The Director will lead transformational efforts, including the design and execution of interim service models during the renovation period and the strategic build-out of future-state F&B operations post-renovation.

Core responsibilities span food and beverage systems leadership, team architecture and development, member experience management, financial stewardship, beverage program innovation, events oversight, as well as cross-departmental collaboration. The Director will develop and refine standard operating procedures, training frameworks, and accountability structures, ensuring alignment between front-of-house and back-of-house teams. Leadership duties include mentoring departmental managers, fostering a culture of accountability and continuous improvement, and overseeing staffing and succession planning.

Financial and operational stewardship is a key aspect of this role, with accountability for departmental profit and loss management, budgeting, cost control, and vendor relations. The Director will also spearhead beverage programming initiatives including wine, bar, and cocktail offerings, ensuring a balance between innovation and profitability. Event operations will be managed in conjunction with the Events leadership to deliver consistent, high-quality experiences that maximize revenue opportunities.

Job Requirements

  • Bachelor’s degree preferred
  • 10+ years of progressive food & beverage leadership experience
  • 5+ years in senior leadership role within private clubs, luxury hospitality or fine dining
  • proven success leading multi-outlet food & beverage operations and large teams
  • strong financial acumen including budgeting, cost control and forecasting
  • experience with Jonas or similar POS/accounting systems preferred
  • food safety and alcohol service certifications required

Job Duties

  • Serve as the club’s senior food & beverage authority and operational architect

  • ensure alignment between FOH and BOH to deliver seamless member experiences
  • lead, mentor, and develop the service director, F&B manager, events leadership, and outlet managers
  • build a culture of accountability, coaching, and continuous improvement
  • establish clear organizational structure, staffing models, and succession planning
  • oversee hiring, onboarding, training, and performance management systems
  • serve as the leadership multiplier for the entire F&B department
  • ensure consistent execution of idle hour’s hospitality standards across all touchpoints
  • monitor dining experience survey feedback and implement structured improvement plans
  • establish and reinforce service recovery systems
  • maintain a visible presence in dining spaces to stay connected to the member experience
  • partner with membership and leadership to elevate engagement and satisfaction
  • own departmental P&L performance including revenue, labor, and cost controls
  • develop and manage annual operating and capital budgets
  • monitor financial performance and implement corrective actions as needed
  • oversee purchasing, inventory, and vendor relationships
  • ensure strong cash controls, reporting accuracy, and operational discipline
  • oversee wine, bar, and beverage programming across all outlets
  • partner with leadership on menu strategy, pricing, and product development
  • support innovation while maintaining consistency and profitability
  • ensure proper training and execution of beverage standards
  • oversee catering and banquet operations in partnership with events leadership
  • ensure consistency of experience across a la carte dining and private events
  • align staffing, service models, and execution standards across all event formats
  • support strategic growth of F&B revenue through programming and experience design
  • lead F&B operational strategy during clubhouse and kitchen renovation
