Fredericka Manor Retirement Community is a well-established, reputable retirement living facility committed to providing exceptional care and quality of life for its residents. The role of Director of Dining Services (DDS) at Fredericka Manor is a vital leadership position overseeing the entire food service operations across all departments including Residential, Assisted Living, and the Care Center/Health Services. This full-time position works Monday through Friday from 8:30 a.m. to 5:00 p.m. and offers a competitive salary range of $100,000 to $115,000 annually. Reporting to the Executive Director and collaborating closely with the Vice President of Nutrition and Dining Service, the DDS is responsible for ensuring a high standard of food quality, presentation, and customer satisfaction. This includes supervision of kitchen and dining room personnel, managing budgets for food and supplies, ensuring compliance with dietary modifications, and providing dietary counseling when necessary.
The Director of Dining Services must combine operational excellence with strong leadership skills. A key part of the role is directing department activities, facilitating effective communication among staff, and managing procurement and maintenance of dining services equipment. The DDS also leads weekly management meetings, plans menus, coordinates catering for special events, and ensures adherence to safety and cleanliness standards while complying with all federal, state, and organizational regulations. For candidates with Registered Dietitian credentials, the position includes active participation in interdisciplinary care conferences, nutritional assessments, and personalized dietary counseling for residents.
In addition to operational duties, the DDS plays an essential role in staff management, including hiring, training, scheduling, performance evaluation, and resolving work-related issues. The ideal candidate will have experience in long-term care dietary services, preferably with exposure to geriatric or retirement home environments, and hold relevant certifications such as RD or Certified Dietary Manager, as well as ServSafe or an equivalent certification. Job Requirements
- Bachelor’s degree
- 1 year experience as Dietitian in long term care
- 1 year experience as Director of Dining Services
- May be Registered Dietitian (RD) or Certified Dietary Manager (CDM)
- ServSafe or equivalent certification required
- Ability to manage personnel and operations effectively
- Strong communication and organizational skills
- Ability to ensure compliance with health and safety regulations
Job Qualifications
- Registered Dietitian (RD) preferred or Certified Dietary Manager (CDM) from a state approved program
- ServSafe or equivalent certification required
- Bachelor’s degree
- Experience as a Dietitian in long term care for at least 1 year
- Experience as Director of Dining Services for at least 1 year
- Preferably 1 year retirement home or geriatric experience
- Strong knowledge of nutrition principles and menu planning
- Leadership and management experience in food service operations
Job Duties
- Provide quality customer service efficiently to residents, families, co-workers and vendors in a manner to ensure satisfaction
- Direct the operations of the Dining Services Department, assign tasks, delegate responsibilities, resolve operational problems and employee grievances
- Purchase and direct the preparation of quality food on a large scale, maintain and repair equipment
- Conduct weekly management meetings and collaborate with leadership regarding operations, scheduling and budgeting
- Plan menus, coordinate catering for special events and theme days
- Attend resident care conferences and provide dietetic input if RD, including nutrition assessments and dietary counseling
- Ensure adherence to all safety, cleanliness, and health regulations in food preparation and service
- Manage hiring, training, scheduling, performance evaluation, and discipline of Dining Services personnel
- Coordinate and provide Dining Services in-service training for staff
- Understand and follow the facility’s fire and disaster emergency plans
