The OKANA Resort & Indoor Waterpark, located along the scenic Oklahoma River in the heart of the vibrant Horizons District near downtown Oklahoma City, is one of Pyramid Global Hospitality's premier properties. This resort features over 400 well-appointed guest rooms and suites, including premium riverfront accommodations, a dynamic indoor waterpark, multiple dining venues, and extensive meeting and event spaces covering 27,000 square feet. As the Director of Culinary at OKANA Resort & Indoor Waterpark, you will take on a leadership role overseeing the entire culinary operations of the resort. This includes managing kitchen staff, designing innovative menus for all food outlets, and ensuring the highest standards of food quality and presentation. This role requires a creative and passionate individual with a sophisticated understanding of diverse cuisines and culinary techniques. Collaborative leadership is essential, as the Director of Culinary will work closely with food service, sales, and catering teams to deliver excellent guest experiences. The position entails balancing creativity with strategic cost management as you create signature menu items that differentiate OKANA from competitors. In addition, this leadership role carries the responsibility for mentoring and developing aspiring culinary professionals on the team.

Job Requirements

  • High school diploma required
  • Culinary education or certifications preferred
  • Minimum 10 years of experience in culinary leadership
  • At least 5 years of experience as an Executive Chef in a hotel or resort with multiple food outlets
  • Opening experience a plus
  • Strong leadership, organizational and communication skills
  • Knowledge of various cooking methods, ingredients, styles, equipment and procedures
  • Creative mindset for menu development
  • Budget management and cost control skills
  • Customer service orientation
  • Knowledge of food safety regulations and practices

Job Qualifications

  • High school diploma

  • Ability to manage budgets and control food and labor costs
  • Customer-centric approach during site inspections and VIP events
  • Thorough knowledge of food safety regulations and best practices

Job Duties

  • Assist in obtaining financial goals
  • Complete all paperwork accurately and timely
  • Direct and correct the presentation and portioning of food according to Davidson standards
  • Keep in contact with all outlets to ensure quality and consistency
  • Maintain work area clean and organized
  • Promote employee empowerment
  • Report unsafe conditions immediately
  • Select daily specials that fit local trends and needs
  • Select, train, supervise, develop, discipline and counsel employees in accordance with Davidson policies and procedures
  • Complete other duties as assigned by supervisor to include cross training
  • Direct purchasing to ensure proper quality and quantities
  • Direct staff in sanitation and sanitary food handling
  • Meet with salespeople to evaluate new products
  • Perform in the capacity of any position supervised
  • Prepare and train staff in use of working menus, recipe cards and photo standards
  • Schedule staff according to business levels
  • Attend all required meetings
