The Tucson Convention Center, a key property within the Legends Global portfolio, includes several notable facilities: the Tucson Arena, Linda Ronstadt Music Hall, and Leo Rich Theater. The center is currently seeking a skilled Director of Food & Beverage to manage the daily operations of its Food and Beverage Department. This managerial role demands a professional who excels in directing all food and beverage activities, ensuring high-quality service, compliance with health and safety regulations, and effective cost management. The Director will be responsible for developing event work plans, overseeing personnel, marketing services to clients, and managing budgets, inventory, and vendor relationships. Working closely with the General Manager and Finance Department, the Director will provide accurate financial forecasts and reports, maintain food quality standards, manage purchasing, labor scheduling, and control costs including spoilage and cost of sales.

Job Requirements

Job Qualifications
- Certificate or degree from an accredited culinary school, college, or technical school preferred
- Minimum 5 years’ experience in management level position in Food and Beverage or equivalent combination of education and experience
- Previous experience in overall Food and Beverage operations, sales, inventory control, cost control and food preparation procedures
- Previous experience in food purchasing including price negotiations
- Excellent knowledge of current culinary and concession trends, presentation, and food quality
- Previous experience in standardizing recipes, plating, and costing of menus
- Previous experience collaborating with sub-contractor vendors
- Serv Safe food and Serv Safe Alcohol certified
- Maintain PCI Compliance certification
- Alcohol awareness certificate and training capabilities
- Strong orientation to customer service and ability to collaborate with clients and staff members
- Results oriented individual with the ability to meet required budgetary goals
- Excellent organizational, multi-tasking, planning, written and verbal communication skills
- Attention to detail and service oriented
- Prior supervisory experience required
- Computer skills including proficiency with Microsoft Office programs
- Ability to be creative with buffet presentations and maintain a quality product
Job Duties
- Daily management of the Food and Beverage departmental operations and personnel
- Market food and beverage services to clients and establishes Food and Beverage controls
- Foster and maintain positive client relations
- Develops event work plans including scheduling and ordering and assigns appropriate duties to subordinates
- Works with all departments to ensure quality experience
- Reconciles accounts and generates post event reports for finance
- Create food and beverage sales projections and budgets for facility events
- Work in conjunction with the General Manager and Finance Department to produce accurate forecasts and other financial, inventory, sales or labor reports
- Responsible for stand inventory and per capita reports for each event and ongoing fiscal reporting
- Purchase and oversee distribution of all products to concessions outlets
- Responsible for daily concession and catering food and beverage compliance and service concerns such as health department regulations, alcohol beverage service guidelines and standards, menu engineering/development and detailed costing for concessions operation
- Hire and train new food and beverage employees
- anticipate and schedule labor needs for event and non-event days
- Controls spoilage, cost of sales
- Work in conjunction with the General Manager to develop annual catering sales and upselling goals
- Develop and oversee catering prospecting and sales initiatives to achieve set goals
- Monitor in conjunction with the Maintenance Department all preventative and reactive maintenance programs for the Food and Beverage Department
- Inspect and taste prepared food to maintain quality standards and sanitation regulations
- Work with limited supervision and interact with all levels of staff, including management
- Work flexible hours including nights, weekends, and holidays
- Serve as Manager on Duty as required
- Perform all other duties assigned by the General Manager
