Job Description
The Omaha Marriott at the Capitol District is a premier hotel located in the vibrant heart of downtown Omaha. In this role, the Director of Food and Beverage will have overall responsibility for the direction and operational management of all food and beverage activities within the hotel. This includes the oversight of restaurants, bars, lounges, in-room dining, banquet and catering services, group and social events, and experiential dining programs. The Director will provide strategic vision, ensuring that all food and beverage concepts, programming, and service models align with Marriott's brand standards, ownership's objectives, market demand, and emerging industry trends. The role demands a forward-thinking leader who can drive innovation, enhance guest engagement, and maintain high standards of quality and service.
The Director will lead a team dedicated to delivering an exceptional guest experience by maintaining a visible presence on the floor, actively seeking feedback, and driving continuous improvements. A critical aspect of the position is ensuring compliance with all health, safety, sanitation, regulatory, brand, and audit requirements, thereby creating a safe and enjoyable environment for guests and associates alike. Financial management is another key responsibility, requiring the Director to oversee departmental budgets, forecasts, and financial performance, including revenues, gross operating profits, labor productivity, cost controls, inventory management, purchasing, and vendor relations.
The role also includes fostering strong collaboration between the culinary and service teams, working closely with the Executive Chef to ensure menu relevance, food quality, consistency, and operational efficiency. Partnerships with Sales, Events, Rooms, Finance, and other hotel leadership are essential to support group bookings, complex events, and meet overall business goals. The Director of Food and Beverage will play a hands-on role in key client interactions, including tastings, site visits, planning meetings, and post-event reviews, supporting sales and enhancing client relationships.
Leadership cultivation is a cornerstone of this role, with responsibility for recruiting, developing, and retaining high-performing staff, fostering a culture of accountability, inclusion, and teamwork, and implementing succession planning to ensure ongoing success. The Director will ensure a respectful, well-managed workplace that promotes morale, productivity, and adherence to company policies and employment standards.

Job Requirements
- Bachelor's degree in hospitality management or related field preferred
- Minimum 5-7 years of progressive Food & Beverage leadership experience
- Proven experience managing large banquets and catering operations
- Strong financial skills including revenue growth, budgeting, forecasting, and cost control
- Familiarity with Marriott systems and brand standards preferred
- Excellent leadership and communication skills
- Ability to work in a fast-paced environment with attention to detail
- Experience with Food & Beverage branding and experiential dining preferred
Job Qualifications
- Bachelor's degree in hospitality management, business administration, or related field preferred
- Minimum 5-7 years of progressive Food & Beverage leadership experience preferably within upscale or luxury hotels
- Proven experience managing large banquets and catering operations
- Strong financial acumen with success in revenue growth, budgeting, forecasting, and cost control
- Experience with Marriott systems, brand standards, and reporting tools preferred
- Exceptional leadership, organizational, communication, and interpersonal skills
- Ability to thrive in a fast-paced, high-volume environment while maintaining attention to detail
- Experience with Food & Beverage concept branding and experiential dining preferred
Job Duties
- Provide strategic vision and leadership for all food and beverage operations
- Oversee all food & beverage operations including restaurants, bars, lounges, kitchens, in-room dining, banquets, catering, and experiential dining programs
- Lead the development and evolution of food and beverage concepts including menu and beverage programming, presentation, merchandising, pricing strategies, and experiential offerings
- Ensure exceptional guest experiences through visible leadership, active floor presence, and continuous improvement
- Maintain full compliance with health, safety, sanitation, regulatory, brand, and audit standards
- Own financial performance of the Food & Beverage department including revenue, GOP, labor productivity, cost control, inventory, purchasing, and vendor relations
- Develop and monitor departmental budgets and forecasts and present performance reviews
- Drive revenue growth through pricing, menu engineering, demand optimization, suggestive selling, and targeted promotions
- Provide leadership for banquet and catering operations including menu development, service execution, event logistics, and client satisfaction
- Collaborate with the Executive Chef to ensure menu relevance, food quality, and alignment between culinary and service teams
- Partner with Sales, Events, Rooms, Finance, and other leadership to support group bookings and event execution
- Participate in client interactions including tastings, site visits, planning meetings, and post-event reviews
- Recruit, develop, and retain high-performing Food & Beverage leaders and associates
