The salary range for the role of Director of Culinary Development is competitive, between $180,500 and $199,500, with the actual pay depending on experience, qualifications, and location of work.

The Director of Culinary Development at Hyatt is a key leadership role within the Lifestyle Group’s Food & Beverage Operations team. This position is responsible for leading the development of innovative culinary menus and concepts across independently positioned and branded full-service restaurants, bars, and nightlife venues throughout the Americas. The role requires collaboration with the broader operations, development, and design teams to ensure that all culinary offerings align with Hyatt’s standards of quality, safety, sustainability, and profitability. The successful candidate will possess a strong passion and proven expertise in creating exciting, dynamic culinary experiences and leading kitchen design initiatives that support those concepts. Responsibilities include leading menu development to drive traffic and optimize labor and product efficiency, overseeing kitchen layout and equipment specifications, sourcing and mentoring culinary talent, and engaging with owners and stakeholders as needed. The Director is also charged with maintaining consistency and high standards across all menus, developing systems for property-level culinary leaders to contribute creatively, and providing comprehensive training materials and recipe documentation. Job Requirements

  • Must be able to travel up to 75 percent as needed
  • Strong understanding of culinary operational principles
  • Ability to influence stakeholders at all levels
  • Superior verbal and written communication skills
  • Ability to do theoretical costing for food, purchasing, and labor
  • Strong command of P&Ls and ability to improve operations and profitability
  • Hands-on leader who works alongside culinary teams
  • Above average understanding of Human Resources SOPs

Job Qualifications

  • Minimum 10-15 years culinary experience with progressive responsibility
  • At least 5 years in an executive chef or comparable management role in lifestyle hotels or creative restaurant concepting
  • Experience in food and beverage development and operations with a proven success record
  • Well-versed in kitchen operations
  • Current ServSafe Certification
  • Proficiency with Microsoft Office

Job Duties

  • Lead all menu development and culinary concept creation in collaboration with development, creative, and design teams for independently positioned and branded restaurants, bars, and nightlife venues
  • Ensure menus and culinary concepts drive traffic and maximize product and labor efficiency
  • Lead kitchen layout, design, and equipment package specification for branded venues
  • Engage in owner relations and interactions as needed
  • Source culinary candidates and form task forces as required
  • Lead, manage, guide, inspire, and develop culinary leaders across the portfolio
  • Ensure all menus are consistent with brand standards and quality
  • Develop systems for property culinary leaders to contribute creatively to concepts
  • Create and maintain recipe books, order guides, and training materials
  • Demonstrate commitment to Hyatt's Core Values
