The position of Director and Chef - Travel, also referred to as the Opening Team Lead, is a critical role within the CCL Hospitality Group. This position demands a dynamic leader capable of managing and directing dining service teams through new business openings and transitions. The role involves significant travel responsibilities, requiring up to 100% travel and the ability to work in various conditions. As the Opening Team Lead, the candidate will spearhead operations for both Unidine and Morrison Living at assigned locations, overseeing culinary and front-of-house systems teams to deliver an elevated dining experience. This leadership role includes implementing brand-specific processes during transitions and openings, ensuring high standards of food quality, service excellence, and compliance with regulatory requirements are consistently met.

Essential to the role is the ability to build strong relationships with clients, team members, and residents, serving as an ambassador for the CCL brand, values, vision, and mission. The Opening Team Lead will also be responsible for training Dining Service Directors and new onsite management to embrace and uphold the company culture. The role encompasses comprehensive duties such as food and supply purchasing, recruiting and onboarding new hires, managing budgets, scheduling, payroll, cash auditing, and leading dining room operations. This position requires someone adaptable and flexible, capable of managing fast-paced environments and complex facility transitions while maintaining operational excellence.

CCL Hospitality Group offers a competitive salary range of $86,000 to $95,000 along with a robust benefits package. The role is designed for a candidate with at least five years of related experience at the Dining Service Director, Executive Chef, or Chef Manager level, holding relevant certifications and ideally, a bachelor's degree in Food Science, Nutrition, Culinary Arts, or a related field. Job Requirements

  • Minimum five years related experience and/or training at Dining Service Director, Executive Chef or Chef Manager level
  • Serve Safe, Choke Save and Allergen certification preferred
  • Bachelor’s degree in Food Science, Nutrition, Culinary Arts or Hotel/Restaurant Management highly desirable
  • Completion of Certified Dietary Management program preferred
  • Prior experience leading dining service transitions and openings
  • Ability to communicate clearly and concisely both verbally and in writing
  • Must live within one hour of a major airport
  • Must have valid driver’s license and reliable transportation
  • Ability to work under extreme temperature conditions and in fast-paced environments
  • Must be able to lift, push, and carry frequently
  • Computer proficiency in multiple software programs
  • Availability for extended travel up to 100%

Job Duties

  • Lead Unidine and Morrison Living operations at various locations
  • Direct and manage culinary and front-of-house teams during openings and transitions

  • Train Dining Service Directors and new onsite management on company systems and culture
  • Oversee food purchasing and ensure compliance with product specifications
  • Support recruiting and onboarding new hires and client employee transitions
  • Manage budgeting, scheduling, payroll, and cash auditing
  • Maintain high standards of food quality, service, and sanitation
  • Build and sustain excellent relationships with clients, residents, and internal teams
  • Administer training and development programs for staff and management
