The role of Dietary Services Supervisor is a crucial leadership position reporting directly to the Administrator. This role involves overseeing the entire food service program within the facility, from managing inventory levels and staff supervision to ensuring compliance with physician diet orders and relevant labor regulations. The supervisor is responsible for planning staffing schedules, maintaining food safety standards by managing expiration dates, and educating employees on preparing medically prescribed diets to accommodate the diverse nutritional needs of residents. Beyond administrative duties, the supervisor will actively engage in auditing diet orders, implementing recommendations from dieticians and speech therapists, and fostering communication across departments using tools like the Communication Log.

This full-time position requires the candidate to be well-versed in purchasing, inventory rotation, meal preparation oversight, and adherence to menu plans compliant with healthcare regulations. The supervisor will also monitor residents' dietary intake, ensuring nutrient-dense diets are consumed and appropriate substitutions are offered when necessary. Critical responsibilities include maintaining nourishment rooms, staffing these areas adequately, and ensuring cleanliness and food safety. Job Requirements

  • must comply with state requirements as outlined in title 22
  • must possess the ability to manage the overall organization and operation of the food service program within established federal, state and local guidelines
  • good physical and mental health
  • dietetic services supervisor or certified dietary manager is highly preferred

Job Qualifications

  • graduate of dietetic technician training program approved by the american dietetic association or currently registered by the commission on dietetic registration
  • b.s. degree in foods and nutrition, dietetics, or food management and 1 year of experience in the dietetic service of a licensed health facility or snf experience
  • dietetic assistant training program approved by the american dietetic association
  • dietetic services training program approved by the dietary managers association with certification and in service training on california dietary service requirements
  • college degree program with major studies in food and nutrition, dietetics, food management, culinary arts, or hotel and restaurant management with dietary manager certification and in service training
  • state approved program providing 90 or more hours of classroom instruction in dietetic services supervision

Job Duties

  • maintains appropriate inventory levels to meet routine and emergency needs of all residents
  • purchase, rotate and stock all food items and department supplies
  • utilize or dispose of all food items prior to the expiration date
  • hire, supervise, counsel and terminate employees as necessary
  • educate employees in the preparation of medically prescribed diets as defined by physician orders, recipes and meal production sheets
  • plan staffing schedules to compensate for employee breaks, meal periods and vacations
  • monitor preparation and service of meals to ensure the menu, recipes and production sheets are being followed by all staff
