The role of Dietary Manager at Avalon Health and Rehab Pasco involves a critical leadership position within the dining services department. This full-time position, offering an hourly wage between $35.00 and $38.00 depending on experience and qualifications, plays an essential part in ensuring the nutritional needs of the residents are met with the highest standards of quality and care. The Dietary Manager is responsible for effectively managing the dining services team to prepare nutritious, well-balanced meals that comply with dietary restrictions and health requirements. This includes creating and implementing menus that accommodate specialized diets such as low-sodium, diabetic, and heart-healthy options.

Beyond meal preparation, the Dietary Manager oversees all operational aspects of dining services management, including budgeting, cost control, and regulatory compliance. They work collaboratively with nutritionists, dietitians, and other healthcare professionals to align dining services with resident health plans and regulatory standards. This position also entails conducting resident interviews to understand their food preferences, allergies, and special dietary needs, ensuring personalized meal service. Maintaining inventory accuracy and portion control within budgetary constraints is another critical responsibility.

Job Requirements

  • High school diploma or equivalent
  • Certified Dietary Manager Certification or equivalent national certification preferred
  • Associate's or higher degree in food service management or hospitality with relevant coursework preferred
  • Minimum 3 years dining services management experience
  • Minimum 1 year senior living dining services experience
  • Graduate of ADA-approved food services course or culinary certification
  • Current Food Handlers permit or ServSafe certification required
  • Experience preparing meals for large groups
  • Knowledge of special diets
  • Business management experience in dining services
  • Minimum 2 years supervisory experience

Job Qualifications

  • Must have high school diploma or equivalent
  • Certified Dietary Manager Certification strongly preferred or have similar national certification for food service management and safety from a national certifying body
  • Have an associate's or higher degree in food service management or hospitality with relevant course study
  • Have 2 or more years experience as director of food and nutrition services in a nursing facility and completed food safety and management course by October 1, 2023
  • Must have 3 years dining services management experience with 1 year senior living experience
  • Must be graduate of ADA-approved food service course or culinary certification
  • Must have current Food Handlers permit or ServSafe certification
  • Must be experienced in preparing meals for large groups in hospitality environment
  • Must be knowledgeable of special diets
  • Must be seasoned business manager understanding financial and operational aspects
  • Must have 2 years supervisory experience

Job Duties

  • Plan, develop, organize, implement and evaluate dining services goals, policies and procedures
  • Work in cooperation with nutritionists, dietitians and comply with all federal, state and local requirements
  • Represent dining services team at resident council meetings for feedback on dining services
  • Develop menus offering heart-healthy choices and consider low-sodium and diabetic diet needs
  • Maintain a recipe file for meals
  • Upgrade knowledge of dietary management and nutrition continually
  • Comply with budget in labor and expense control
  • Maintain inventory and portion controls within budget
  • Plan written menus at least 30 days in advance involving resident preferences
  • Interview new residents to acquire food preferences, allergies and special requests
  • Develop system to track residents dietary needs and monitor changes
