Job Description

We are a dedicated food service entity within a healthcare facility that prioritizes both patient care and food quality through meticulous dietary preparations and strict compliance with federal, state, and local guidelines. Our team works closely with dietetic professionals to ensure that every meal served supports the specialized nutritional needs of our patients and residents, encompassing both regular and therapeutic diet plans.
The Dietary Assistant Cook role is a crucial position responsible for assisting in all dietary functions under the guidance of the Dietetic Service Director, Dietetic Cook, and Facility Administrator. This position involves preparing, portioning, and serving food items according to planned menus, including items for regular and therapeutic diets. The role demands diligence in following standardized recipes, maintaining food safety standards, and ensuring the timely service of meals and snacks. The assistant cook also supports meal preparation for special events and employee food services as required.
This role calls for strict attention to portion control, proper food handling techniques, and meticulous record-keeping of food substitutions and temperature monitoring to ensure quality and safety. Additionally, maintaining sanitary work conditions and following cleaning protocols ensures a safe and efficient kitchen environment. The position requires physical endurance to perform tasks involving lifting, bending, and standing for extended periods, alongside the ability to work effectively within a team and compassionately interact with patients or residents.

Job Requirements
- high school diploma or equivalent
- prior experience in dietary or food service roles preferred
- knowledge of food safety regulations
- ability to stand for extended periods
- capability to bend, stoop, lift, and move intermittently throughout the workday
- ability to taste and smell food to determine quality

Job Qualifications
- high school diploma or equivalent
- experience in food preparation or dietary services preferred
- knowledge of dietary and nutritional standards and regulations

Job Duties
- prepares and/or pre-portions food such as beverages, salads, desserts, and other assigned items for regular and therapeutic diets according to the planned menu
- prepares and/or portions food using proper food handling and safety techniques according to established policies and regulations
- utilizes standardized recipes when preparing food for regular and therapeutic diets
- ensures proper quantity of food is prepared and/or pre-portioned as directed
- makes only authorized substitutions to the planned menu and records the substitution according to policy
- ensures food is prepared and/or pre-portioned in accordance with established time schedules
- assists in preparation and/or service of meals/food for employees and special events as instructed
- keeps work area clean and uncluttered during food preparation and service
- uses correct portion control utensils during preparation, pre-portioning, and service
- uses proper technique to taste prepared food to ensure quality and palatability
- maintains proper food temperature during preparation and service and records temperatures according to policy
- serves food according to planned menu and patient preferences and diet order
- ensures food is served attractively and appetizingly
- assists in checking trays during service to ensure accuracy
- ensures meals and snacks are sent on time from kitchen or serving area
- performs assigned cleaning duties using proper chemicals
- follows oral and written instructions
- maintains care and use of supplies, equipment, work area appearance, safety, and performance of duties
- seeks out new methods and principles for incorporation into practice
