The Desert Studies Lead Cook position is an essential role within the California Desert Studies Consortium, an academic partnership formed in 1974 among seven CSU campuses to promote awareness and understanding of California's desert regions. The Consortium’s mission centers on enhancing student academic skills and heightening public appreciation through desert-focused education, research, and special programming. This role, classified as Cook II Lead, is located at the Consortium’s remote field station near Zzyzx, California, in the Mojave Desert, with on-site housing provided.
This temporary 9-month position, ending on or before June 30, 2027, requires a dedicated individual to lead the culinary operations during the fall, winter, and spring seasons. The Desert Studies Lead Cook will plan, organize, and oversee meal preparation and service for guests visiting the station, ensuring quality, safety, and sanitation standards in an isolated desert environment with extreme weather conditions. Responsibilities include cooking large quantities of food, managing inventory, purchasing supplies often traveling long distances, and maintaining culinary equipment and workspaces. The role demands a high level of leadership, communication, and problem-solving skills, as well as the ability to instruct and supervise kitchen staff and visitors.

Job Requirements
- Valid California driver’s license
- background check including a criminal records check
- ability to work weekends and on-call as needed
- capacity to work in extreme weather conditions including temperatures from 20F to 120F
- willingness to live on-site at remote desert field station
- ability to work on uneven and unpaved surfaces
- flexibility in work schedule
- minimum one year of lead cook experience or two years in similar supervisory role
Job Qualifications
- Equivalent to one year of experience performing the duties of Cook I Lead or two years of experience in a lead capacity over cooks and/or food service workers
- working knowledge of kitchen sanitation and safety measures
- knowledge of food handling sanitation principles, procedures, and large quantity cooking
- knowledge of operations, cleaning, and care of utensils and equipment
- understanding of food values and nutritional substitutions
- ability to plan menus and lead food handling methods
- effective communication and problem-solving skills
- sound decision-making ability
