Job Requirements
- a high school diploma or GED
- three years of full-time paid food service experience in an institutional cafeteria setting
- or an associate's degree in food service management, nutrition, or a related field
- one year of full-time paid food service experience in an institutional setting
- experience in cooking and food sanitation
- ability to monitor portion control, quality, and temperature of cooked food
- strong communication and supervisory skills
- ability to ensure compliance with sanitation and safety protocols
- capacity to manage labor including inmates
Job Qualifications
- a high school diploma or GED
- three years of full-time paid food service experience in an institutional cafeteria setting including cooking and food sanitation
- monitoring cooked food products for portion control, quality, and temperature
- or an associate's degree from a recognized college or university in food service management, nutrition or a related field
- one year of full-time paid food service experience in an institutional cafeteria setting
- ability to train staff and inmates
- knowledge of HACCP sanitation standards
- strong supervisory and communication skills
Job Duties
- provide daily assignments and instructions to scheduled staff
- assure that workers understand and follow instructions
- train service workers and inmates in food preparation re-thermalization and food sanitation
- ensure sanitation practices and procedures are followed by performing continuous shift sanitation inspections (HACCP) of all storage, service, and production areas
- supervise inmate labor
- oversee proper food preparation
- assist food service manager and vendors with food service-related duties such as stocking shelves, preparing reports, and handling maintenance issues
- daily supervising work duties of vendor service workers and inmate labor
- communicate with all county and vendor personnel regarding food preparation and delivery
- communicate all security issues to appropriate Wayne County Sheriff personnel
