The role of Demi Chef De Rang at Disney Cruise Line is a coveted position within the elegant French-inspired luxury restaurants, Remy and Enchanté. These restaurants offer guests an exquisite culinary journey overseen by Michelin star chefs, emphasizing refined service and attention to detail. As a Demi Chef De Rang, you will be instrumental in delivering an exceptional dining experience to guests by ensuring smooth and attentive service within your station, which typically includes 10-12 guests. Reporting directly to the Maitre d'Hotel, you will be responsible for coordinating food and beverage service, maintaining high sanitation and presentation standards, and supporting the overall operations of the restaurant.
This shipboard position demands a candidate who is not only passionate about fine dining but also motivated to work in a dynamic maritime environment. Key responsibilities include managing side work such as preparing mise en place, polishing silverware and glassware, setting up beverage stations, and maintaining cleanliness throughout service. Additionally, you will utilize a computerized point-of-sale system to efficiently process beverage orders and work closely with kitchen and bar teams to ensure timely and accurate delivery. Understanding and adhering to food safety and United States Public Health sanitation standards is critical in maintaining the integrity of service.
Candidates should have significant prior experience in the fine dining sector, preferably in Michelin Star restaurants, with a strong knowledge of international wines, cocktail recipes, and alcohol brands. Effective communication skills are necessary to engage confidently with well-traveled and discerning guests. Given the nature of the position on a cruise ship, candidates must demonstrate a readiness to live and work onboard, share accommodations if applicable, and comply with strict safety and ship protocols. Job Requirements
- be genuinely interested in a career at sea and willing to live and work onboard a Disney Cruise Line vessel
- be willing to follow and perform safety role emergency responsibilities and associated responsibilities as specified in the ship Assembly Plan
- be willing to uphold the general safety management responsibilities as specified in the Safety Management System in areas and operations under their control
- if applicable be willing to share a confined cabin with other crew members and appreciative of working and living in a multicultural environment that has strict rules and regulations
- have a valid passport and C1/D Seaman's visa DCL will provide you with documents to obtain this
- complete a pre-employment medical
- obtain a criminal background check
- bring approved work shoes
Job Qualifications
- minimum one year two years recommended recent experience in the service industry in a high-level fine dining restaurant setting
- experience in Michelin Star restaurant
- good knowledge of international wines and cocktail recipes and brands of alcohol
- confidence in speaking to well-traveled guests
- prior ship experience preferred
Job Duties
- prioritize and coordinate service for 10 - 12 guests in station at the direction of the Chef De Rang
- complete all side work and other tasks assigned by management including preparing mise en place polishing silverware and glassware setting up coffee and beverage station picking up linen preparing bread station and maintaining cleanliness of the restaurant during service
- use computer work station to ring in alcoholic and non-alcoholic beverages
- coordinate the ordering pick-up and delivery of all food and beverage to work station and to guests
- understand food safety programs and maintain United States Public Health sanitation and cleanliness standards throughout work area
