Military Deli & Bakery Services (MDBS) is a dedicated food service company that specializes in managing delicatessen and bakery operations across U.S. Military commissary locations. Currently serving at 103 military commissaries nationwide, MDBS is committed to delivering high-quality food products and exceptional customer service to the brave men and women in uniform and their families. The role of the Deli-Bakery General Manager at MDBS is a pivotal leadership position that combines management expertise with a genuine passion for people and food service. This full-time role involves overseeing the day-to-day operations of deli and bakery departments within a military commissary, ensuring all facets of the department run smoothly and efficiently. The General Manager will lead and inspire a team by creating a positive, respectful work culture anchored in praise, recognition, and immediate constructive feedback. They are responsible for training and developing associates to meet the company’s rigorous standards in policies, procedures, and customer service practices.
This position demands strong customer service skills, as the General Manager will interact with customers directly, assisting with orders and ensuring a courteous and prompt experience. Financial acumen is also crucial, as the manager must meet or exceed sales and profit goals through effective merchandising, pricing, and inventory management. Engaging the team in regular sales meetings to strategize on merchandising and maximize profitability is a primary function. Compliance with food safety regulations and government policies is mandatory to maintain the high standards MDBS upholds. The General Manager will also handle scheduling to balance labor costs against sales volume, ensuring adequate staffing without exceeding budget.
The role requires physical stamina and manual dexterity as it involves routine tasks needing lifting, standing for extended periods, and operation of deli/bakery equipment such as slicers and ovens. Additionally, the ideal candidate will be flexible to work nights, weekends, and holidays to meet the schedules of the military commissary audience. A Food Safety Management Certification is necessary, either obtained before hire or within 30 days afterward, affirming the commitment to safe food handling practices.

Job Requirements
- Must be able to perform the essential job functions of this position with or without accommodation
- Ability to frequently reach, lift, and maneuver objects of varying dimensions and weights up to approximately 50 lbs
- Ability to stand for long periods of time, walk, move rapidly, bend, stoop, twist and turn frequently
- Available to work nights, weekends, and holidays
Job Qualifications
- Management experience in retail, food service and/or Deli/Bakery
- Knowledge and understanding of all equipment in the Deli/Bakery such as slicers and ovens according to company guidelines
- Effective communication skills
- Ability to deal with conflict and resolution within the department while maintaining a professional relationship
- Manual dexterity and good hand-eye coordination
- Valid Food Safety Management Certification or ability to obtain one within 30 days from the hire date
Job Duties

- Assists and communicates with customers in a friendly, courteous, and prompt manner
- receives and records special customer orders via the telephone or in the store utilizing suggestive sales techniques
- Directs and participates in Deli/Bakery activities to include receiving, designing, preparing, pricing, displaying, maintaining, and ordering product in order to maximize sales, earnings, and customer satisfaction
- Follows all food safety regulations and guidelines
- Conducts weekly sales meetings with the teams to establish merchandising, sales, and profit objectives
- Updates Department for seasonal merchandising
- Attains budgeted sales and profit goals
- Prepares weekly work schedule to ensure adequate coverage and service level, while adhering to weekly sales/labor rate
- Monitors, complies, and enforces government and MDBS policies and procedures
