Job Requirements
- Must have a TABC certificate
- must have Food Handlers Certification
- ability to stand and bend for long periods
- able to push, pull and lift 30 lbs regularly
- able to work in a fast-paced kitchen environment with moderate to loud noise levels
- able to work within extreme temperature ranges
- able to communicate effectively in English
Job Qualifications
- High school education is preferred but not required
- must have 5 years previous cooking experience in an upper tiered restaurant and or hotel
- strong working knowledge of all cooking techniques, butchering, sauces, vinaigrettes and garde manger
- strong working knowledge of elevated standards of sanitation
- knowledge of operating all kitchen equipment including stoves, ovens, broilers, slicers, steamers, kettles
- ability to remain calm and composed in stressful situations
- ability to read, write and understand the English language to read tickets, recipes and communicate with other employees
- ability to perform duties within extreme temperature ranges
Job Duties
- Prepares all foods in accordance with standard recipes
- visually inspects, selects, and uses only food items of the highest quality in the preparation of all menu items
- checks and controls the proper storage of product and portion control including food rotation
- inspects all stations before service to ensure the kitchen is set up to standards
- keeps all refrigeration, storage, and working areas clean to comply with health department and hotel regulations
- assists Chef with creation of daily specials
- ensures all equipment is clean and in proper working condition
- reads and employs basic math skills to appropriately prepare items according to recipes
- able to stand and bend for long periods of time
- able to push, pull and lift 30 lbs on a regular basis
- performs other duties as assigned
