This establishment maintains rigorous standards in all aspects of its operations, particularly in its culinary services, where quality, professionalism, and attention to detail are paramount.\n\nThe role at hand is for a skilled and experienced cook responsible for maintenance, set up, food production, and quality control of all meat, fish, fowl, and other food items prepared in the Tribute kitchen. This position plays a critical role in sustaining the hotel's luxury standards and reputation while upholding the highest levels of discretion and professionalism. The cook supervises and collaborates with all kitchen staff to ensure food preparation, cooking, and presentation align with hotel standards. Tasks include preparing foods according to standard recipes, inspecting and selecting only the highest quality food items, ensuring proper storage and portion control, maintaining cleanliness and compliance with health regulations, assisting the Chef in creating daily specials, and ensuring all kitchen equipment functions properly. This role requires standing and bending for long periods, the ability to lift and carry up to 30 pounds regularly, and adaptability to varying work hours depending on business needs. The ideal candidate is highly motivated, organized, communicative, cooperative, and adept at managing changing situations. Applicants must have at least five years of cooking experience in upper-tier restaurants or hotels, possess strong knowledge of cooking techniques, butchering, sauces, vinaigrettes, garde manger, and elevated standards of sanitation. Additionally, knowledge of kitchen equipment operation and the ability to remain calm under pressure are essential. The candidate must hold relevant certifications such as a TABC certificate and Food Handlers Certification and meet physical requirements involving stamina, hearing, vision, literacy, and safe handling of chemicals as required in a fast-paced kitchen environment. Job Qualifications
- High school education is preferred but not required
- must have 5 years previous cooking experience in an upper tiered restaurant and or hotel
- strong working knowledge of all cooking techniques, butchering, sauces, vinaigrettes and garde manger
- strong working knowledge of elevated standards of sanitation
- knowledge of operating all kitchen equipment including stoves, ovens, broilers, slicers, steamers, kettles
- ability to remain calm and composed in stressful situations
- ability to read, write and understand the English language to read tickets, recipes and communicate with other employees
- ability to perform duties within extreme temperature ranges
Job Duties
- Prepares all foods in accordance with standard recipes
- visually inspects, selects, and uses only food items of the highest quality in the preparation of all menu items
- checks and controls the proper storage of product and portion control including food rotation
- inspects all stations before service to ensure the kitchen is set up to standards
- keeps all refrigeration, storage, and working areas clean to comply with health department and hotel regulations
- assists Chef with creation of daily specials
- ensures all equipment is clean and in proper working condition
- reads and employs basic math skills to appropriately prepare items according to recipes
- able to stand and bend for long periods of time
- able to push, pull and lift 30 lbs on a regular basis
- performs other duties as assigned
