The role of Culinary Standards Manager at Disney Cruise Line is a critical shoreside position based in Celebration, FL. This position is part of the shoreside culinary team and focuses on hands-on menu development, recipe package creation, and implementation across multiple food service areas including Main Dining, a la Carte venues, Concierge Offerings, Marceline Market/Cabanas Food Court, Castaway Cay, Disney Lookout Cay, Groups & Functions, and offerings for crew and officers. The Culinary Standards Manager is responsible for ensuring recipe accuracy, cost management, and consistency across all current and future vessels in the fleet. This role involves collaborating closely with various Food and Beverage business lines and shipboard teams to drive culinary excellence and uphold Disney’s renowned quality standards.

Beyond recipe and menu oversight, the manager takes ownership of all food and beverage collateral from its inception to delivery, including print inventories. The position requires leading and mentoring culinary teams through coaching and training, participating in succession planning, and encouraging communication and teamwork between shoreside and shipboard colleagues. Regular audits of food procedures and standards are conducted, both onshore and onboard ships, which may require travel and sailing assignments. The Culinary Standards Manager supports the achievement of goals related to guest satisfaction, crew excellence, operational efficiency, and financial performance. This role offers a competitive salary range from $83,000 to $111,200 annually, complemented by potential bonuses, incentives, and an extensive benefits package. Job Requirements

  • Minimum 5 years’ experience in an Executive Sous Chef role or higher
  • experience in menu development and implementation
  • experience within a la carte, banqueting, large volume operations and Quick Service
  • ability to be flexible with work schedule which will include shipboard implementations and audits
  • demonstrate strong presentation, business planning skill, conflict resolution and organizational skills
  • demonstrate computer proficiency within a Windows/Mac environment
  • demonstrate a high level of cooking skills and knowledge
  • demonstrate a high level of initiative, motivation, problem solving skills as well as continuous improvement skills
  • ability to travel both domestically and internationally based on operational needs

Job Qualifications

Job Duties

  • Assist in development of all menu content
  • consistently look for ways to create, renew, refresh to delight guests with new products
  • partner with all Disney Cruise Line Food and Beverage lines of business to ensure open communication
  • partner with food managers to achieve highest culinary standards and crew excellence by effective leadership, motivation, empowerment and communication
  • own all Food and Beverage collateral from conception to delivery including print inventories
  • participate in all succession planning and training plans for Culinary teams
  • establish effective partnerships with other lines of business by fostering teamwork among shipboard and shore teams
  • partner with ships teams to ensure all audits are completed timely including regular auditing of all procedures
  • act as coach, mentor and adviser to culinary teams
  • assist in leading direct reports to define, communicate and achieve specific goals in guest satisfaction, crew excellence, operational and financial excellence and productivity
  • lead and conduct onsite audits and lead trainings requiring travel and sailing
