The Director of Culinary Services - Fine Dining position at Integral Senior Living presents a unique opportunity for culinary professionals passionate about senior care and fine dining hospitality. This leadership role is integral to the quality of life offered in ISL’s communities through the development and delivery of high-standard food services tailored specifically to meet the dietary and cultural preferences of residents. As the Director, you will lead culinary teams through policy implementation, menu planning, quality assurance, and food safety initiatives. You will utilize your expertise to craft menus that respect regional and cultural tastes while adhering to resident dietary guidelines. Your responsibilities include monitoring food preparation techniques, ensuring aesthetic and nutritional standards, managing food inventory, negotiating vendor contracts, and upholding stringent sanitation and safety regulations. Job Requirements

  • Bachelor's degree in culinary arts program preferred
  • minimum of 5 years of management experience in a food service environment
  • food safety training completed

Job Duties

  • Develops and implements food services policies, procedures, and job descriptions
  • plans menus and menu cycles according to cultural and regional food preferences, and resident dietary guidelines
  • adjusts recipes to appropriate yield
  • monitors the quality and consistency of the food including food temperatures, portion control, palatability, and attractiveness
  • implements changes to ensure quality according to established standards
  • observes workers engaged in preparing, portioning, and garnishing foods
  • cooks and carves meats and prepares dishes
  • orders food and chemical supplies for the kitchen
  • receives and validates all food deliveries against order forms
  • inventories food items monthly
  • conducts regular quality assurance audits
  • practices safe and sanitary food handling
  • practices all safety and loss prevention procedures
  • negotiates and signs food service agreements with vendors
  • selects, schedules, and conducts orientation and in-service educational programs for personnel
  • monitors monthly expenditures and explains significant variances to ensure budget compliance
