The Fifth Street Diner operates robustly, serving 50-80 covers on weekdays and scaling up to 150-300 covers during peak weekends. Nearby, the Royale Room offers a more intimate dining experience with 30-80 covers nightly. The Sous Chef position available at Thompson Austin is a restaurant operations-focused role intended for a culinary leader who thrives on the line and excels in managing high-volume service with precision and enthusiasm. This role demands a confident and hands-on leader capable of orchestrating breakfast, lunch, and select dinner services with visible leadership, ensuring seamless execution and excellent food quality. The Sous Chef is expected to build and maintain operational systems to support consistency, including effective ordering, inventory management, labor scheduling, and cost control. Job Requirements

  • Culinary education and/or on the job training
  • Experience in a high-volume kitchen environment
  • Strong leadership and communication skills
  • Proficient in general computer knowledge
  • Willingness to work flexible schedule including days, evenings, weekends, and holidays
  • Ability to produce consistent products timely
  • Desire to exceed guest expectations
  • Geographic flexibility preferred
  • Ability to train and mentor kitchen staff
  • Basic financial management experience
  • Commitment to safety and sanitation
  • Ability to work under pressure while maintaining professionalism

Job Qualifications

  • 1-2 years in a high-volume restaurant leadership role
  • Experience leading breakfast and brunch services strongly preferred
  • Experience with ordering, inventory, and scheduling
  • Proven ability to expedite service confidently
  • Strong foundational understanding of cost control
  • Branded restaurant experience preferred
  • Lifestyle hotel experience preferred
  • Familiarity with Birchstreet or similar purchasing platforms preferred
  • Experience in multi-outlet environments preferred
  • Demonstrated leadership competencies including driving results through operational discipline
  • Building trust through consistency and accountability
  • Leading with professionalism and integrity

Job Duties

  • Lead breakfast, lunch, and some dinner execution
  • Expedite during peak service periods
  • Maintain visible leadership presence on the line
  • Ensure excellent food quality, timing, and consistency
  • Support seamless back-of-house and front-of-house communication
  • Own ordering, inventory, and vendor communication
  • Manage weekly scheduling and labor alignment
  • Conduct monthly inventory and monitor food cost
  • Build and maintain pars and structured prep systems
  • Implement and monitor documented line check processes
  • Assist in managing food cost and waste reduction
  • Align staffing levels to forecasted volume
  • Maintain awareness of labor targets
  • Ensure proper use of Hyatt purchasing system
  • Train, mentor, and hold cooks accountable
  • Participate in hiring and onboarding
  • Build a culture of urgency, pride, and professionalism
  • Model Hyatt values and Thompson brand standards
  • Create an environment where cooks grow and stay
