The AM Culinary Supervisor role at Hyatt at Olive 8 is a critical leadership position within the culinary team, responsible for overseeing kitchen operations predominantly during early morning hours. This role requires an individual with a firm understanding of hotel kitchen workflows and the capacity to supervise the restaurant kitchens to ensure every dish meets or surpasses guest expectations. The supervisor must have specific expertise with the breakfast line and excel in leading a team of hourly cooks in an energetic, team-oriented environment. Scheduled typically from 5:00 a.m. to 2:30 p.m., the role demands vigilance, organizational skills, and culinary knowledge to maintain high standards in food production. The Culinary Supervisor aids in managing department responsibilities, including training team members, overseeing cost control, coordinating ordering through the Purchasing team, monitoring payroll and overtime, and maintaining operational efficiency.

The position offers a competitive hourly wage starting at $32.70, with a progression to $33.35 per hour after four years of service in the role. Job Requirements

  • Four years of previous line experience preferred
  • Culinary leadership experience preferred
  • Culinary degree or related hotel experience preferred
  • Experience in high-volume kitchens including breakfast lines and from scratch cooking
  • Ability to perform basic, intermediate, and advanced cooking skills
  • Ability to work in a fast-paced kitchen environment while standing and walking for long periods
  • Ability to work multiple stations in the kitchen
  • Ability to lift, push, or pull a moderate amount of weight
  • Strong communication skills
  • Open schedule flexibility including mornings, weekends and holidays
  • Must be available to work from 05:00a to 02:30p
  • Understanding of food safety standards
  • Must have Food Handler's Card

Job Qualifications

  • Four years of previous line experience preferred, including banquet and restaurant kitchens
  • Culinary leadership experience preferred
  • Culinary degree or related hotel experience is preferred
  • Experience in high-volume kitchens, including breakfast lines and from scratch cooking
  • Ability to perform basic, intermediate, and advanced cooking skills
  • Ability to work in a fast-paced kitchen environment while standing and walking for long periods
  • Ability to work multiple stations in the kitchen
  • Ability to lift, push, or pull a moderate amount of weight
  • Strong communication skills
  • Open schedule flexibility including mornings, weekends, and holidays

Job Duties

  • Supervise restaurant kitchen operations during morning shifts
  • Monitor and maintain breakfast line quality and consistency
  • Lead and train hourly cooks to ensure compliance with food safety and quality standards
  • Oversee cost control measures including payroll and overtime monitoring
  • Coordinate with Purchasing team to manage food and supply requisitions
  • Assume department responsibilities in the absence of the Sous Chef
  • Ensure timely production of high-quality culinary products in a fast-paced environment
