The DoubleTree by Hilton Miami Airport Convention Center is a premier hotel located just south of Miami International Airport, making it a strategic location for both travelers and staff. This hotel boasts 334 tastefully decorated guestrooms, on-site dining options, a fitness room, outdoor pool, business center, and expansive meeting and event spaces. We are currently seeking a skilled Culinary Operations Supervisor to join our dedicated team. This is a 100% on-site, full-time role, focused on delivering exceptional culinary services. Reporting directly to the Executive Sous Chef, the Culinary Operations Supervisor plays a pivotal role in managing and directing day-to-day culinary operations across various food and beverage outlets within the hotel. The role demands leadership, excellent organizational skills, and a hands-on approach to ensure smooth culinary processes and exceptional food quality. The ideal candidate will prioritize maintaining profitable food costs, delivering high-quality culinary products, and providing exemplary service to guests.

The Culinary Operations Supervisor oversees kitchen staff, coordinates food preparation, and ensures compliance with health and safety regulations. This role requires versatility, as the supervisor may step in to perform line cook duties and rotate through various kitchen positions as needed. Responsibilities extend to managing inventories, monitoring labor and food costs, and supporting continuous staff training and professional development initiatives. The supervisor assists with hiring new team members and takes part in employee performance evaluations, contributing to a culture of excellence and continuous improvement. Candidates must be capable of working in a fast-paced, high-pressure environment while demonstrating strong problem-solving, multitasking, and communication skills. Familiarity with Windows software applications, food preparation techniques, and health and liquor regulations is essential.

Job Requirements

  • Bachelor's degree in restaurant management or culinary school certification preferred
  • Minimum of 3 years' experience in a similar supervisory role
  • Ability to work 100% on-site
  • Flexibility to work long hours when necessary
  • Capability to lift items up to 50 lbs
  • Ability to stand for the entire duration of the shift

Job Duties

  • Assist the chef in overseeing daily kitchen operations and all food service activities
  • Provide direction to kitchen staff, ensuring smooth execution of all employee responsibilities
  • Monitor kitchen operations to ensure adherence to health and fire department regulations
  • Ensure compliance with all food handling requirements and standards set forth by state, federal, and local agencies
  • Help implement and manage kitchen and restaurant policies and procedures during scheduled shifts
  • Step in to perform line cook duties as needed and be versatile in all kitchen positions
  • Maintain proper food storage temperatures and keep recipe books updated with current menu items
  • Utilize daily prep sheets and product counts accurately, participating in the monthly inventory process
  • Identify and resolve any issues with inventory, systems, or staffing proactively
  • Monitor labor costs, ensuring budgetary goals are met in alignment with restaurant policies
  • Support training and development initiatives for kitchen staff
  • Participate in the hiring process, conducting interviews and making recommendations
  • Assist in completing employee performance reviews for back-of-house staff
