At Vi at Lakeside Village, the Culinary Nutrition Chef plays a crucial role within the Care Center by supporting the Executive Chef in managing the culinary operations. This position is essential for ensuring the preparation and delivery of high-quality, nutritious meals tailored to meet the specific dietary needs of residents, including those with therapeutic and texture-modified diets such as diabetic, low-sodium, and pureed options. Working collaboratively with the Nutrition Services Manager, the Culinary Nutrition Chef ensures all meals adhere to stringent nutritional standards as well as the residents' medical dietary requirements.

The role demands a hands-on approach in food preparation, plating, and service, all executed in alignment with established menu guidelines and individualized resident care plans. This position also upholds rigorous standards of sanitation and safety, adhering to Hazard Analysis Critical Control Point (HACCP) protocols as well as local, state, and federal regulations. In addition to culinary duties, the Culinary Nutrition Chef manages a team by overseeing staffing, training, scheduling, performance management, and employee relations to maintain a highly efficient kitchen operation.

Additionally, the Culinary Nutrition Chef collaborates closely with the Executive Chef to ensure recipe accuracy, standardization, and consistency in ingredient usage and menu offerings, guaranteeing a superior dining product for the residents. Constant coordination with the Nutrition Services Manager is key to assimilating relevant nutritional data and accommodating residents' food preferences, thereby creating a positive and satisfying dining experience. Job Requirements

  • Associate's Degree in Nutrition or approved Dietary Managers certificate
  • Minimum of 3 years clinical nutrition experience
  • State certification in food service sanitation required
  • Certified Dietary Manager or willingness to obtain certification within six months
  • Valid and current driver's license
  • Compliance with Florida's Care Provider Background Screening process

Job Qualifications

  • Associate's Degree in Nutrition from an approved program or certificate from an approved Dietary Managers course
  • Bachelor’s Degree in nutrition from an accredited college or university preferred
  • Minimum of 3 years in clinical nutrition experience
  • Food and Beverage Operations experience highly desirable
  • State certification in food service sanitation
  • Certified Dietary Manager or willingness to obtain certification within six months of appointment
  • Valid and current driver's license

Job Duties

  • Prepare high-quality, nutritious meals tailored to various therapeutic and texture-modified diets
  • Collaborate with the Nutrition Services Manager to uphold nutritional adequacy and compliance with dietary orders
  • Engage in food preparation, plating, and service in line with established menus and resident care plans
  • Ensure adherence to sanitation and Hazard Analysis Critical Control Point (HACCP) standards, conforming to local, state, and federal regulations
  • Oversee staffing, training, scheduling, performance oversight, and employee relations
  • Work with the Executive Chef to ensure accuracy, consistency, and standardization of ingredients, recipes, and menus
  • Guarantee food is prepared and cooked to deliver a high-quality dining product
  • Coordinate closely with the Nutrition Services Manager to collect pertinent nutritional information and accommodate residents' food preferences
