Job Requirements

  • 3+ years experience in high-volume culinary operations
  • strong line cook or production background
  • basic leadership or mentoring experience preferred
  • knowledge of food safety and kitchen systems
  • organized and detail-oriented
  • ability to work in fast-paced environments
  • culinary degree or equivalent experience preferred
  • ServSafe certification required

Job Duties

  • Lead daily prep, batch production, and assigned stations with consistency and urgency
  • Execute menu items to RMC standards for flavor, seasoning, temperature, and presentation
  • Set up and break down stations efficiently and correctly
  • Assist with assigning tasks and pacing for cooks and prep staff
  • Serve as a go-to resource for recipe execution and technique questions
  • Inspect finished product and correct quality issues in real time
  • Communicate shortages, equipment issues, and prep needs to supervisors
  • Help train and onboard new team members
  • Reinforce recipe specs, portioning, and plating standards
  • Maintain a clean, organized, and food-safe workstation at all times
  • Support inventory counts, labeling, dating, and proper storage
  • Assist with waste reduction and product utilization
  • Participate in event execution, plating, and on-site service as needed
  • Maintain professionalism and composure in high-volume situations
  • Lead by example through attitude, work ethic, and accountability
  • Follow and uphold all RMC policies, health regulations, and safety standards
