The Culinary Field Chef position at Vallarta Supermarkets serves a pivotal role in supporting day-to-day culinary operations across all its foodservice programs. This exempt, leadership-focused position reports directly to the Director of Culinary and is essential in maintaining consistent execution of Vallarta’s high culinary standards. The role involves extensive hands-on support and coaching for Kitchen Managers and foodservice teams, helping to drive sales growth, product consistency, and a memorable guest experience across multiple locations. With approximately 80 percent of the time spent in the field, the Culinary Field Chef is a key resource for operational oversight, menu and recipe execution, training, and implementing company-wide culinary initiatives.
The role is multifaceted, blending culinary expertise with operational leadership and team development. The Culinary Field Chef collaborates closely with the Corporate Chef and other cross-functional teams to facilitate new menu development, rollout of culinary products, and adherence to company standards. This individual plays an instrumental role in new store openings, remodels, and ongoing training programs, ensuring that all locations operate efficiently and meet Vallarta’s expectations for food quality, safety, and customer service. This position demands flexibility in working hours, including availability for evenings, weekends, holidays, and frequent travel within the operating regions, often requiring overnight stays.
The Culinary Field Chef is tasked not only with ensuring compliance with health, safety, and sanitation regulations but also with optimizing operational efficiency through food cost controls, inventory management, and maintaining kitchen organization. Additionally, this role drives continuous improvement in operational processes and team performance, fostering a culture of accountability, teamwork, and excellence. A high school diploma is mandatory, with culinary degrees considered a strong asset, though equivalent experience is also evaluated. Job Duties
- Provide culinary and operational support across all foodservice concepts
- Coach and support Kitchen Managers on execution, standards, and guest service
- Ensure consistency in recipes, portioning, presentation, and flavor profiles
- Lead training and field execution of new menu items and programs
- Support product development and assist with implementation in the field
- Identify operational improvements to improve cost, efficiency, and quality
- Reinforce company standards, culture, and guest experience expectations
- Monitor performance and support business initiatives aligned with company goals
- Ensure compliance with health, safety, and sanitation standards
- Support food cost control, inventory, and operational reporting
- Maintain kitchen cleanliness, organization, and efficiency
- Assist with new store openings, remodels, and training execution
- Ensure consistency of recipes, procedures, and training materials
- Assist with staffing, onboarding, and team development as needed
- Enforce recipe adherence, portion control, and food quality standards
- Maintain HACCP compliance and food safety procedures
- Monitor temperature control, storage, and handling practices
- Conduct quality checks for taste, appearance, and consistency
- Deliver and model Vallarta's Nuestra CASA service standards
- Support strong guest satisfaction and service execution
- Address customer feedback professionally and promptly
- Provide coaching, training, and development to culinary teams
- Promote accountability, teamwork, and performance standards
- Partner with leadership on performance and operational needs
- Support operations across Taqueria, Prepared Foods, Juice Bar, Grab & Go, and Catering as assigned
- Maintain clear communication with leadership regarding production needs, shortages, or operational challenges
- Ensure timely escalation of issues that may impact food safety, quality, or service
- Enforce all safety procedures and proper equipment use
- Report incidents and maintain safe working conditions
- Ensure adherence to company policies and standards
