The Culinary Director at Aramark will play a key leadership role overseeing all kitchen operations and culinary activities. This position involves directly supervising kitchen personnel, training and mentoring staff, and ensuring top-quality culinary standards are maintained. The Culinary Director is responsible for menu planning, recipe development, food purchasing, and enforcing kitchen safety and sanitation protocols. This role requires hands-on leadership and occasional cooking duties, spending no more than 20% of their time actively preparing selected dishes.
The ideal candidate will have over 8 years of experience in the culinary and food service industry, including extensive management experience. A bachelor’s degree or equivalent experience is required. The Culinary Director must be adept at leading diverse teams with a strong focus on client and customer service. Experience controlling food and labor costs, demonstrating cooking techniques, and managing menu pricing is highly preferred. Additionally, familiarity with P&L accountability or contract-managed service operations is a valuable asset.
Beyond overseeing daily kitchen operations, the Culinary Director may also coordinate special catering events and provide culinary instruction, demonstrating advanced culinary techniques. They are directly responsible for hiring, mentoring, conducting performance reviews, and recommending pay increases for kitchen personnel. Job Duties
- Train and lead kitchen personnel
- estimate food consumption and requisition or purchase food
- select and develop recipes as well as standardize production recipes to ensure consistent quality
- establish presentation technique and quality standards
- plan and price menus
- ensure accurate equipment operation and maintenance
- ensure accurate safety and sanitation in kitchen
- cook selected items no more than 20 percent of the time
- coordinate special catering events and offer culinary instruction or demonstrations
- directly supervise kitchen personnel with responsibility for hiring, mentoring, performance reviews and initiating pay increases
