Job Requirements
- Work 7 days a week while onboard the ship
- Commit to 6-8 weeks of work followed by 2 weeks of unpaid vacation
- Ability to adapt to ship motions including surge, sway, heave, roll, pitch, and yaw
- Ability to respond promptly to last-minute requests or changes
- Capability to multi-task and thrive in a team setting
- Work calmly and effectively under pressure
- Ability to work approximately 12 hours per day
- Assist in on-board emergencies which may involve climbing a ladder and maneuvering through a 20 inch diameter hatch
- Stand for the duration of the shift
- Lift up to 20 lbs frequently and up to 50 lbs occasionally
- Frequent bending, squatting, and reaching as necessary
- Ability to reside and work onboard a vessel for extended periods
- Use stairs regularly
Job Qualifications
- Associate's degree in Culinary Arts or Pastry & Baking, or 3-5 years of relevant experience with a focus on quality production
- Basic understanding of professional baking and pastry techniques, along with food and beverage knowledge
- Strong problem-solving, organization, and self-motivation skills
- Commitment to delivering exceptional service
- Ability to pass a pre-employment drug test
- Completion of a criminal background check
- Possession of a Transportation Worker Identification Credential (TWIC)
- Capacity to perform essential job functions with or without accommodation
Job Duties
- Lead the preparation and artistry of desserts, breads, pastries, and cookies for the vessel on a daily basis
- Prepare and serve menu items following established recipes, portion sizes, and presentation standards
- Set up, maintain, and break down the work station according to FDA standards
- Taste all products to ensure quality and consistency
- Communicate product shortages or equipment issues to the Executive Chef
- Keep accurate counts of all food items to align prepared quantities with requirements
- Schedule the production of all baked goods for efficiency
- Maintain a steady inventory of fresh baked goods
- Utilize food production equipment properly and safely
- Maintain a professional appearance at all times
- Ensure each guest has a positive and memorable experience
