The role of Creative Pastry Specialist at American Cruise Lines offers culinary experts a unique opportunity to contribute to the onboard dining experience by specializing in a diverse range of desserts and baked goods. The position involves preparing intricate pastries, breads, cookies, and confectionery items with attention to flavor pairings, aesthetic presentation, and quality. Reporting to the Executive Chef, the specialist will execute the daily menu matrix and actively participate in creating innovative dessert recipes that delight guests. This role requires versatility, creativity, and dedication, as well as the ability to work under pressure in a dynamic shipboard kitchen environment. Job Requirements

  • Ability to work 7 days a week onboard the ship
  • willingness to commit to 6-8 weeks of work followed by 2 weeks of unpaid vacation
  • adaptability to ship motions including surge, sway, heave, roll, pitch, and yaw
  • capability to respond to last-minute requests or changes promptly
  • ability to multitask and thrive in a team setting
  • ability to work approximately 12 hours per day
  • ability to assist in on-board emergencies
  • capability to stand for the duration of the shift
  • ability to lift up to 20 lbs frequently and up to 50 lbs occasionally
  • frequent bending, squatting, and reaching as necessary
  • ability to reside and work onboard a vessel for extended periods
  • ability to use stairs regularly

Job Qualifications

  • Associate's degree in Culinary Arts or Pastry & Baking, or 3-5 years of relevant experience with a focus on quality production
  • basic understanding of professional baking and pastry techniques, along with food & beverage knowledge
  • strong problem-solving, organization, and self-motivation skills
  • commitment to delivering exceptional service
  • ability to pass a pre-employment drug test
  • completion of a criminal background check
  • possession of a Transportation Worker Identification Credential (TWIC)
  • capacity to perform essential job functions with or without accommodation

Job Duties

  • Lead the preparation and artistry of desserts, breads, pastries, and cookies for the vessel on a daily basis
  • prepare and serve menu items following established recipes, portion sizes, and presentation standards
  • set up, maintain, and break down the work station according to FDA standards
  • taste all products to ensure quality and consistency
  • communicate product shortages or equipment issues to the Executive Chef
  • keep accurate counts of all food items to align prepared quantities with requirements
  • schedule the production of all baked goods for efficiency
