The role of a Cook at CGR Company is integral to the culinary team. This position is responsible for assisting the Sous Chef in daily operations while ensuring that all dishes meet established standards for quality, taste, and presentation. The Cook’s duties extend across various culinary functions, including sautéing, plating, production, and grilling, often contributing to banquet services and line cooking. Maintaining cleanliness, organization, and compliance with local and federal health regulations is crucial to the role, ensuring a safe and sanitary environment in the kitchen.
A successful Cook at CGR must exhibit exceptional knife skills and an in-depth understanding of cooking temperatures, hold times, and food safety protocols. This includes strict adherence to labeling and rotation standards such as FIFO (First-In, First-Out) and utilizing systems like the Preprint Labeling System to maintain freshness and quality. The Cook must be adaptable, able to handle a fast-paced and dynamic work environment, and possess excellent communication and problem-solving skills to work effectively within a team. The role also demands flexibility in scheduling, including availability for overtime, evenings, weekends, and holidays.
This is a hands-on position where the Cook not only prepares and presents food but also manages supplies, checks par stock levels, and collaborates closely with the Sous Chef to align daily objectives with the needs of the kitchen. The position requires an individual who takes pride in their work, maintains a professional appearance and attitude, and demonstrates a genuine concern for guests' satisfaction. The ability to understand and execute menus for multiple service points within the establishment, including signature restaurants, room service, lounges, pool bars, and catering operations, showcases the diverse nature of the responsibilities handled in this position.

Job Requirements
- High school diploma or equivalent
- Previous cooking experience preferred
- Knowledge of safe food handling and sanitation guidelines
- Ability to work under pressure in a fast-paced environment
- Excellent knife skills
- Strong communication and teamwork skills
- Flexibility to work evenings, weekends, and holidays
- Valid driver’s license and insurance for operating company vehicle
- Physical ability to stand for long periods and lift heavy items
- Commitment to maintaining a clean and organized workstation
- Ability to follow detailed instructions and recipes

- Able to understand and work in a la carte kitchen system to include understanding of kitchen tickets, timing of orders produced, and timing of various stations for expediting the Guest’s orders
- Ability to learn and execute menus for 3 Signature Restaurant meal periods, room service, lounges, pool bars, Grab and Go Marketplace, Full-Service Catering Operation
Job Duties
- Checks with Sous Chef for daily objectives
- Ascertains the daily specials and methods of preparation and presentation
- Ensures all dishes are prepared and presented in accordance with standard recipes and presentations established by the Sous Chef
- Cleans and organizes work stations
- Maintains a clean and sanitary culinary environment in compliance with all local and federal health codes
- Performs banquet and kitchen line functions as directed by the Sous Chef or Executive Sous Chef including sauteing, production, plating, and grilling
- Ensures assigned workstation has proper level of par stocks and supplies according to daily menus and banquets
