Job Requirements
- One year of experience in food preparation and serving
- Possession of a valid food handlers card
- ServSafe certification preferred
- Ability to work a rotating shift schedule

Job Duties
- Instruct and train adult inmates and/or assist cooks in the operation of equipment used in food preparation, serving, cleanup, and other kitchen tasks
- Follow established rules and regulations to maintain the security of the kitchen area
- Prepare and oversee the preparation of vegetables, salads and salad dressings, and routine desserts and baked goods
- Participate in the cleaning of food preparation areas, kitchen equipment, dining rooms, and storerooms
- Observe and inspect the work to ensure adherence to safety and sanitation regulations and practices, and to ensure work is accomplished properly and efficiently
- Provide valuable firsthand information to improve the quality and quantity of work performed
- Check work in progress and upon completion to ensure assignees are following daily time schedules
- Fill in job completion charts during and at the end of assigned shift
- Assist in receiving food and supply deliveries, checking and storing food and supplies
- Assist cooks with preparing special diet trays for youth or adult inmates with allergies or diet restrictions
- Maintain constant control of kitchen utensils, tools and equipment for security purposes
- Serve food to youth or adult inmates and staff
- Assist with the general cleanliness of the food services areas
- Maintain security and discipline in the food service areas
- Determine quantities of food to prepare
- Document daily meal counts, transport records and production records
- Conduct daily inspections of kitchen, food storage and dining areas to ensure cleanliness and security
